CARACOLES EN SALSA VIZCAINA/ESCARGOTS IN BIZKAINE SAUCE

Me encanta la Navidad por los recuerdos de toda la familia alrededor de la mesa, aunque lleve su tiempo y trabajo el preparar todos los platos y vuelen una vez los presentas en la mesa, me da mucha satisfacción ver que se lo comen a gusto¡¡¡ En estas fechas mi amatxu siempre nos preparaba los caracoles en salsa, iba al mercado donde habia un puesto que vendian los caracoles serranos que recogian los dias anteriores, ella les daba de comer harina o salvado durante unos 15 días, también le añadia unas ramitas de tomillo y romero, asi mientras se purgaban bien luego les quedaba un sabor a campo muy bueno. Si no encontrais donde os vendan estos caracoles siempre teneis la posibilidad de comprarlos ya envasados al vacio, limpios y cocidos en los supermercados aunque el sabor ya es diferente.
Para el proceso de limpiarlos teneis que hacer lo siguiente: poner los caracoles vivos en el fregadora, coger sal gorda,  agua y vinagre limpiarlos muy bien para que se vayan las babas, teneis que aclararlos muy bien, minimo 3 veces.
Los poneis luego en la olla con agua templada y a fuego muy suave. Tirais esa primera agua de hervir, asi ya sabeis que estarán perfectamente limpios, en la segunda agua seguis poniendo los caracoles a fuego muy suave para que vayan sacando las cabezas, cuando veais que están fuera, entonces subis el fuego fuerte, de esa manera las cabezas no se meteran dentro de su cascarón. Luego le añadis al agua caliente, sal, laurel, una cabeza de ajos (hacerles unas rajitas) , una cebolla grande y unos granos de pimienta negra. Tener los caracoles durante una hora y media.
Aparte hareis la salsa vizcaina:
Remojar unos pimientos choriceros o ñoras y reservar.
En una sarten se frien unas 3 rebanadas de pan y cuando esten doradas las apartais, en el mismo aceite se añade el tocino del jamón y se derrite, añadis una cebolla roja bien grande picada y la dorais a fuego lento, cuando esté dorada le echais un  tomate grande rojo rallado, el pan frito previamente con un poco del caldo de los caracoles y los pimientos choriceros.
Escurrir los caracoles y pasarlos a una cazuela de barro, luego le echais por encima la salsa que os salga del pasapuré, añadirle unas gotas de tabasco a vuestro gusto o si lo preferís un par de guindillas cayenas.
Para terminar se le añade taquitos de jamón y de chorizo, se rectifica de sal y hervir despacio durante un rato, la salsa os tendrá que quedar ni muy espesa ni muy liquida.

I love Christmas time and the remembrance of being all the family united around the dining-table, regardless the time that takes to prepare all these nice dishes and the small time that they are eaten, it gives me a lot of satisfaction to see how they enjoy eating them¡¡ In these times my mother (amatxu) always prepared the escargots in sauce, she used to go to the local market where there was a stall selling live escargots collected in the countryside, then she fed them during a forthnight with flour or bran, she also added some thyme and rosemary in this way the escargots were purged and their flavour remains to the countryside herbs. If you do not find this type of live escargots, then you can buy them in the supermarket already cleaned and cooked but the flavour is different.
The cleaning process is the following:
Put all the lived escargots in the sink and clean them with water, gross salt and vinegar and rub them with care not to break the shells, you have to do this process at least 3 times. Then put them in a deep casserole with warm water at very slow fire,  throw away this water and add more clean water and start boiling again at medium fire, when you see the escargot´s heads out of the shell, then put the fire very high in this way the heads will not come back to their shells. Then add to the hot water, salt, bay leaf, a garlic head, a big red onion and some black pepper grains. Stay the escargots boiling there at medium fire during one hour and a half.
For the Bizkaine sauce:
Soak in water the dried red peppers and reserve
In a saucepan fry 3 slices of hard bread and when they are golden reserve. In the same oil add the bacon to be melted, add 1 big red onion chopped and golden in slow fire, once golden add 1 big red tomatoes previously gratted, then add the fried bread with a bit of the water from the escargots and last the dried red peppers.
Drain the water of the escargot and place them in a refractory clay, pour over the sauce which was previously melted in a food-mill, add a bit of tabasco sauce or if you prefer 2 cayenne chillie, to finish add some small pieces of spanish ham and chorizo, rectify the salt and boil at slow fire for a while, the sauce must no be too thick or too liquid.

SALMON Y BACALAO MARINADO/MARINATED COD AND SALMON

Una de las cosas que más me gusta en Navidad es el salmón en los canapes que hacia mi madre, pero esta hoy en vez de comprarlo ahumado, he pensado que lo podria hacer marinado, su sabor es más suave y si lo guardas bien te puede durar hasta 2 meses, pues luego lo conservo en aceite.

Para hacerlos, comprar en la pescaderia medio salmón y medio bacalao frescos, le pedis al pescadero que os lo limpie bien y lo abra por la mitad.
En casa los poneis sobre unas fuentes un poco hondas, poneis una cama con la mitad de azucar y sal, poneis el pescado con la piel para arriba y lo cubris con más sal,azucar y eneldo.Por lo menos un kilo de cada. Dependiendo del grosor lo dejais entre 24 a 48 horas, tapado con papel plastico y metido en la nevera.

Luego le quitais toda la sal y lo lavais un poco, con unas pinzas quitar las espinas que hayan podido quedar y lo fileteais en lonchas. Una vez hecho esto, lo poneis en una tupperware y lo cubris con aceite de girasol, me gusta con este aceite porque con el de oliva el aceite se solidifica. Hecho ésto, podreis sacar a vuestra conveniencia las lonchas de salmón y bacalao, os durará unos 2 meses en la tupperware siempre y cuando este recubierto por el aceite que es un buen conservante. ¿Qué podeis hacer con ésto? Podeis hacer un carpaccio de salmón y bacalo, rallais tomate lo poneis en una fuente y poneis encima las lonchas y chorrito de aceite, lo podeis adornar con huevas de mujol si quereis. También podeis hacer triangulos con pan de molde, untarlos con mantequilla, colocar el salmón y adornar con huevas. En este caso se me ha ocurrido hacer unos canapes diferentes, de varios tipos, enrollados con puntas de esparragos, otros con huevo hilado, dificil de encontrar en las tiendas pero más dificil hacerlo (mi suegra si lo sabia hacer, será cuestión de ponerme a ello,bueno eso otro dia vale?) y por ultimo untar sobre el salmón queso de untar del que más os guste, ponerle por encima un poquito de eneldo, enrollarlo y comerlos¡¡¡ FELIZ AÑO NUEVO A TODOS¡¡ Os deseo de corazón lo mejor¡¡¡

One of the things i most love in Christmas is the Salmon´s canapé my mother used to do, this time instead of buying it smoke I  have bought it fresh and will marinated it, the flavour is softer and if you keep them right it can last up to two months as i preserve it in oil.

Buy in the fishmonger, half a salmon and half a cod (both fresh), ask the fishermonger to clean and take out the bones and open the fish in half.
At home place them in deep trays, put a layer of a sugar-salt mix (a kilo of each),put with the skin above the fish and cover with more salt and sugar and a bit of  dill. Cover with a plastic film and place it in the fridge between 24 to 48 hours depending on the thickness of the fish.

After this take out all the salt and wash it a bit, take out the bones that ca remain and cut the fish in thin slices, places them in a tupperware and cover with sunflower oil as the olive oil solidifies in the fridge. Then you can take out this each time you like to do a meal or canapé with them, it can last in the fridge at least 2 months, taking of course care to cover it with oil. What can you do with this? A salmon and cod "carpaccio", with fresh mashed tomatoes as a layer in the tray and then place the fish. You also can do triangles with loaf bread, spread butter on them and place the salmon, ornate with some caviar. Today i have done 3 different canapé, one with asparragus, other with spread cheese and some dill and the remain one with what we call in Spain " eggs thread",  i have bought it already done but it is difficult to find this in the stores and more difficult to do it¡¡ my mother in law used to do it and one day i will try to do it myself.

PICATOSTES CON CHOCOLATE/BREADCRUMBS WITH CHOCOLATE

Es curioso como la comida hace que tu cerebro te devuelva ráfagas de tu memoria pasada, al comer estos picatostes me ha venido a la cabeza cuando era niña en Bilbao y de las tardes lluviosas y frias de invierno, acomodada en la mesa camilla de casa, jugando a la brisca con mi amama (abuela) Martina y ver a mi madre traer para merendar estos picatostes con una taza de chocolate calentito, esos son unos de mis recuerdos de infancia, y sinceramente el placer que me ha dado comerlos hoy no ha sido tanto por su sabor,que también, sino por la alegria que me ha dado volver por unos segundos a ese momento.
Ingredientes:
Pan duro del dia anterior
Aceite
Azucar
Chocolate para fundir
Leche (opcional)

Para el chocolate eso va a vuestro gusto, podeis coger el chocolate que más os guste, hacerlo con leche o sin ella, yo en mi caso he rallado un poco de chocolate negro puro y lo he mezclado con un poco de agua, mantenerlo caliente hasta la hora de servir.

Cogeis el pan y lo cortais en rodajas y a su vez estas rodajas las partis por la mitad, poner abundante aceite en la sarten y calentar el aceite bien, echar el pan y dar vueltas para que se dore pero no se queme. Sacar el pan y ponerlo en un plato con un papel absorbente para quitar el exceso de aceite, rebozarlo en azucar y servir junto con el chocolate

It is strange how food makes that our brain gives us flashbacks of our past, today when i have eating theses breadcrumbs came to my mind memories when i was a child in Bilbao and its cold and rainy afternoons, sitting at home, playing cards with my dear granny Martina and see that my mother gave us for tea-time the breadcrumbs and a hot chocolate. Those were ones of my dearest childhood memories and sincerely, the pleasure it gave me when eating these breadcrumbs today it has not been for the flavour but for the joy of the remembrance of those moments.

Ingredients:
Hard bread from the previous day
Olive Oil
Sugar
Chocolate
Milk (optional)

Doing the chocolate depends on one´s taste, you can choose your preferred chocolate, mix it with milk or just with only chocolate, in my case i have preferred pure black chocolate and mix it with a bit of water. Keep hot until you serve it.

Take the bread and cut it in loaves, cut the loaves in halves, put a lot of olive oil in the saucepan when it is hot add the bread and fry it until golden being careful on not burnt them. Take out the fried breadcrumbs and place them in a plate where you have put kitchen paper so you can take out the excess of oil, coated the breadcrumbs in sugar and serve together with the chocolate

SORPRESA DE NAVIDAD/CHRISTMAS SURPRISE

Hola a tod@s¡¡¡ se que he andado desaparecida ultimamente pero 3 semanas de pintores en casa y otra semana más para limpiar y ordenar todo no me daba abasto a hacer más cosas¡¡ ya de vuelta y cara a la Navidad, he pensado hacer este plato que os quedará muy bien y no es dificil de hacer, podreis sorprender asi a vuestros amigos y familiares. Lo mejor..que podeis hacer parte de él el dia anterior y el mismo dia cubrirlo con el hojaldre

Se procede a hacer la cinta de lomo igual que en la receta que puse este verano, la salsa la podreis hacer con ciruelas o sin ellas (eso va a vuestro gusto), os repaso rapidamente como hacerla.

Ingredientes para 4/6 personas

1 kilo de cinta de lomo (pedirle al carnicero que os lo de en un bloque entero)
1 cebolla grande
1 o 2 hojas de laurel
1 cabeza de ajos
1 lamina de masa de hojaldre
1 manzana
2 cucharadas de harina
1,5 vaso de vino blanco
0,5 vaso de coñag
1 vaso de agua
Sal y pimienta

En una cacerola poneis la cebolla partida y picadita a pochar a fuego lento, cuando este transparente casi dorada poneis la cinta de loma y dorais por todos lados, añadir la cabeza de ajos y el laurel.Una vez este todo dorado poner la harina y remover bien, verte el vino blanco y el coñac, esperais a que se evapore el alcohol y echais el vaso de agua. Dejar hacer la carne durante unos 20 minutos a fuego medio, si veis que está muy liquida espolvoreais un poco mas de harina, si está muy espesa le podeis añadir un poco de leche. Aqui podeis separar la carne y partirla en filetes, para hacer la salsa quitais el ajo y el laurel y lo pasais por la minipimer. En este caso para darle un toque más navideño he apartado la carne y la he puesto sobre una lamina de hojaldre, cortais en laminas una manzana y lo poneis encima de la carne, cerrais la carne con la lamina de hojaldre, si os ha sobrado una tira la usais para decorar el hojaldre por encima, en mi caso le he puesto un lazo a modo de sorpresa pero seguro que teneis más maña que yo en ponerle otra decoración. Sellais bien el hojaldre con un huevo batido, con un pincel vais pasando por todo el hojaldre, esto hara que se cierre cualquier apertura que tuviera y le va a dar un color dorado bonito. Lo meteis al horno a 180ºC para que se dore bien, no dejarlo mucho tiempo porque se os podria quemar¡¡. A la hora de servir lo sacais tal cual presentado con unas floretas de brocoli y coliflor alrededor y la salsa en salsera aparte, tambén podeis ponerle una ensalada de canonigos para acompañar.

Hello ¡¡ i have been missing during these last 3 weeks, painters at home and after cleaning all the mess it gave me no time to do this blog¡¡. Once returned at home i have decided to do a special Christmas dish, it is easy to do and your family and friends will be delighted with this. The best thing? you can do part of it the previous days and the very same day cover it with the pastry.

You can use the recipe i did for the surloin with prune sauce, the sauce you can do it only with onion and white wine or with prunes (it is up to you¡¡).

Ingredients for 4/6 persons

1 kilo  of surloin (ask your butcher to cut in one whole piece)
1 big onion
1 o 2 bay leaves
1 garlich head
1 layer of puff pastry
1 apple
2 spoons of flour
1,5 glass of white wine
0,5 glass of cognac
1 glass of water
Salt and pepper

In a casserole you put the chopped onions at slow fire, when they are transparent nearly golden put the surloin and golden over all its sides, add the garlic head and two bayleaves. Once it is golden add the spoon of flour, remove well and pour the white wine and the cognac,leave the alcohol to evaporate, add the water and cook it for 20 minutes. Then you cut the surloin in slices, then mix the sauce (take out the garlic and bayleaves) and you can serve it like that. In this case to give it a more Christmas touch i have taken apart the meat put it over a sheet of puff pastry, put slices of apple on the top of the meat ,  cover it and seal with a battered egg, also you can decorate it, in this case i have done a laze (but i am sure you can do a better decoration than me¡¡).Introduce it in the oven at 180ºC be careful not to burn the pastry¡¡  You can serve it with broccoli and cauliflower pieces and the sauce apart.

ALCACHOFAS EN SALSA/ ARTICHOKES IN SAUCE

Muy sencillas y rápidas de preparar, además de ser un buen complemento para la dieta:
Ingredientes para 4 persona:

3 alcachofas por persona
1 cebolla grande
Jamon serrano, jamon york o bacon todo a trocitos (a elegir el que mas nos guste)
1 vaso vino blanco
Medio vaso de agua
Un cuchara de harina

Poneis a pochar la cebolla picada, mientras pelar las alcachofas y trocearlas, añadirle un poco de zumon de limón para que no se vuelvan negras. Picar el jamón a trozos pequeños
Una vez pochada la cebolla, echar las alcachofas y los taquitos de jamon, añadir la harina y remover bien, luego poneis el vino y el agua, un poco de sal y tapais en la olla express no más de 8 minutos.
Sacar y servir


Easy and quick to do, artichokes are a good complement to our diet

Ingredients for 4 persons

3 artichokes per person
1 big onion
Spanish ham, York Ham or bacon all in small pieces (choose what you like more)
1 glass of white wne
Half a glass of water
1 spoon of white flour

Soft the chopped onion, meanwhile peel the artichokes and make halves, add a bit of lemon juice so they do not black.
Once soften the onions, put the artichokes and the ham, add the flour and remove, then pour the white wine and the water, add a bit of salt, close the pressure cooker and cook for not more than 8 minutes.

ESOS AÑOS MARAVILLOS/THOSE WONDERFUL YEARS



























Viendo el otro dia el estupendo programa de "Un pais para comerselo" sobre La Mancha, me vino a la memoria aquellos años en los que no habia autovias y el viajar era cuestión de ponerle tiempo y ganas, se hacian unos viajes muy largos donde las paradas a comer eran obligatorias. Recuerdo en especial cuando ibamos de Madrid a las playas del Mediterraneo y podia llevarnos unas 6 a 7 horas de viaje. Parabamos casi siempre por Mota del Cuervo a comprar queso y pan de pueblo, luego siempre habia una pinada a la sombra para comer la tortilla de patatas con pimientos que hacia mi amatxu y lomo rebozado, todo bien puesto en sus "tupper", se partia el pan de pueblo para acompañar esta comida, y no podia faltar ese queso manchego. El camino se hacia largo pero me encantaba ver todos esos campos llenos de amapolas, por cierto ya no veo amapolas yendo por la autovia¡¡¡ solo quedan restos de lo que eran en los bordes de algunas carreteras. Pasando por la Roda siempre parabamos para comprar los "miguelitos" unos hojaldres rellenos de crema, y hoy en dia aunque tienes que salirte de la carretera siempre me gusta pasar y comprarmelos, es un peregrinaje obligado recuerdo de mi adolescencia. Y estoy segura que vosotros tendreis experiencias parecidas, verdad? Me gustaria oir hablar de ellas¡¡¡































Watching the other day a TV programme called " A country to eat it" about La Mancha area, it came to my memory those years in which there were no motorway and travelling was more a question of time, as the trips were very long and the stops to eat were mandatory. I remember in special when we went from Madrid to the Mediterranean beaches, it took us from 6 to 7 hours to get there. We stopped always in Mota del Cuervo to buy wonderful Manchego Cheese and bread made in this small town, after this we used to stop in a Pine Forest to eat the Spanish omelette and the coated sirloin my mother cooked the day before, all well place in the "tupperware". We cut the bread to accompany all this. During this travel was amazing to see all the landscape full of poppies, nowadays you can see only traces of this in the borders of the road. Arriving to La Roda we always stopped to buy the "Miguelitos" puff pastry filled with cream , uhm¡¡¡, still today when i am near this area i stop to buy them as a remembrance of those wonderful years...I am sure you have similar experiences please put them here¡¡¡

ATUN EN SALSA/TUNA IN TOMATOE SAUCE

Ingredientes para 4 personas:
2 rodajas grandes de atún
1 kg tomate maduro
3 dientes de ajo
Harina
Vinagre
Aceite Oliva y sal

Pedir al pescatero que os quite la piel y espinas del atun
Poner las rodajas en una fuente con algo de sal y un chorro de aceite
Dejar reposar durante unas dos horas
Pasar el atun por harina y freir en una sarten con abundante aceite y apartar enseguida
Escaldar los tomates para pelarlos y trocearlos (sino se tiene tomate natural podeis recurrir a una lata de tomate triturado)
En el mismo aceite donde hemos frito el atún, poner los ajos muy picados, cuando estén dorados echar los tomates troceados, a mi me gusta añadirle una pizca de azucar para matar la acidez de los tomates. Dejar hervir durante 5 a 8 minutos.
Añadirle el atun y dejarlo durante otros 5 minutos y servir.
Tener en cuenta que como casi todos los pescados si los haces más de 10 minutos estos se vuelven secos, sobretodo en el atun, merluza y emperador.

Ingredients for 4 persons
2 big loafs of fresh tuna
1 kilo of rippen tomatoes
3 garlic cloves
Flour
Vinegar
Olive oil and salt

Ask your fishmonger to take out the skin and bones of the tune
Put the tuna loafs in a tray with a bit of salt and vinegar, leave it there for 2 hours.
Coat the tuna in the flour and fry in a saucepan with olive oil. Reserve
Scald the tomatoes, peel and chop them (if you have not fresh tomatoes, you can use a natural tomatoe can)
In the same oil where we have fried the tuna, fry the chopped garlic, add the tomatoes and leave it heat for 5 to 8 minutes
Add the tuna and leave it for other 5 minutes
Have in mind that as nearly all the fishes you can not do them for more than 10 minutes, if not the flesh will become hard.

GULAS CON GAMBAS/SURIMI PSEUDO YOUNG EELS

Recuerdo que mi amatxu nos hacia en Bilbao las gulas cuando era pequeña y el sabor que tenian no tiene nada que ver con las que compramos hoy en dia que es un sucedaneo de las mismas, ya que las autenticas que son angulas jovenes son muy caras, pero como dicen a falta de pan buenas son las tortas, pues nos conformaremos con comprarlas sucedaneas.
El proceso de elaboración es el mismo:
Se coge una sartén con un poco de aceite de oliva y se dora un poco de ajo laminado, cuando esté dorado se echan las gulas y las gambas, y una o dos guindillas (depende de lo picante que os guste),
se sirven inmediatamente porque frias pierden su textura y su sabor.

I remember my mother used to cook in Bilbao the young eels when i was young and the taste has nothing to do with the ones we buy today which is a kind a surimi pseudo baby eels, as the good ones are very expensives, so we will have to satisfy with pseudo ones.
The process is very easy :
Take a saucepan with a bit of olive oil and fry the chopped garlic, once they are golden, put the young eels, the prawns and one or two chillies (depends on how hot you want them), serve inmediately as cold they loose their flavour.

PENCAS DE ACELGAS/SWEETCHARD STALKS

Vamos a aprovechar las pencas que hervimos el otro dia para hacer el potaje de garbanzos, una vez hervidas se salan, se pasan por harina y luego por huevo y se frian. Asi de sencillo, estan crujientes y con una mayonesa o salsa a las finas hierbas queda bien como entrante o primer plato.

We are going to take the leftovers of the other´s day chickpeas and sweetchard, we boiled the stalks of the sweetchard, once done this, we cover this with the flour and then with battered egg, take a saucepan with olive oil and fry the stalks. Serve with herbs sauce or mayonaise.

POTAJE GARBANZOS/CHICKPEAS AND SWEETCHARD STEW

Otro plato "calentito" como diría mi vecino el "cuerpo triste" , es el potaje de garbanzos con acelgas, este potaje se puede hacer también con espinacas, a mi en particular me encantan las acelgas en todas sus versiones, aqui vamos a aprovechar las pencas de las acelgas que las herviremos y luego apartaremos para enseñaros a hacer otros platos con las misma, asi aprovechamos esos tallos que se suelen tirar por no estar duros.
Ingredientes para 4 personas:
400 gramos de garbanzos (ponerlos en remojo durante 12 horas)
1 zanahoria
1 puerro
1 apio
1 manojo de acelgas (unos 300 gramos)
3 dientes de ajo
Media cebolla
6 cucharas de tomate triturado
3 rebanadas de pan duro
Pimentón molido rojo
Cominos (opcional)
Sal
Se pone agua a calentar en la olla a presión con la zanahoria, el apio y el puerro, cuando esté caliente echar los garbanzos, cerrar y dejar minimo 1 hora y media.
Mientras limpiar bien las acelgas y trocearlas
En una sartén con aceite de oliva se frien las 3 rebanadas de pan duro y se apartan
Abrir la olla express y echar rapido las acelgas troceadas y las pencas que luego reservaremos para hacer otro plato, procurar que nunca deje de hervir los garbanzos sino se quedaran duros, dejar las acelgas durante 15 minutos en la olla express tapada.
Mientras en el aceite donde hemos frito el pan se echa media cebolla picadita y el ajo picado, se deja pochar bien, cuando este la cebolla pochada se echa el tomate y una cucharada de pimentón dulce, mezclar bien.
Abrir la olla y echar los garbanzos y las acelgas a una cazuela de barro con cuidado que los garbanzos no dejen de hervir y procuran echar algo de caldo para que no estén secos.
En el cazo de la batidora se echan el pan frito y el sofrito que hemos hecho, si está un poco seco, se pone un poco del caldo donde hemos hervido las acelgas y los garbanzos.
Se bate todo bien y se echa en la cazuela de barro todo el sofrito, mezclar bien.
Probar de sal y servir.

Another "hot" dish for the winter, as my little neighbor better renowned as "the sad body" calls the stew, is the chickpeas and sweetchard stew. You can do this stew also with spinach, although i prefer the sweetchard in all its versions, here we are going to use the leftovers of the stalk of the sweetchards for other dish.































Ingredients for 4 persons:
400 grames of chickpeas (put them soaked during 12 hours)
1 carrot
1 leek
1 celery stick
1 bunch of sweetchard (around 300 grames)
Half an onion
6 spoons of mash tomatoes
3 loaf of hard bread
1 spoon of sweet paprika
A bit of cumins

Boil the water in the pressure cooker with the carrot,leek and celery, when the water is hot add the chickpeas, closed and boil them for 1 hour and half
Meanwhile clean the sweetchards and cut them in pieces
In a saucepan with olive oil, fry the bread and reserve
Open the pressure cooker and add the sweetchards and the stalks ( we will reserve them later for other dish), procure that the chickpeas are boiling all the time otherwise they will be hard. Leave boiling for another 15 minutes in the pressure cooker.
Put the chopped onion and garlic in the saucepan where you had the olive oil that you left for the bread and leave them to become soft, then add the tomatoe natural sauce and the paprika and mix.
Open the pressure cooker and pour the chickpeas and the sweetchards in a refractory clay pan taking care that the chickpeas do not stop boiling, also pour a bit of the soup.
In a mixer put the onions and tomatoes sauce together with the fried bread, if it is dry then add a bit of soup and mix well. Pour this onto the stew, mix well and serve

ENSALADA CON MANZANA/APPLE SALAD

Esta es una de mis ensaladas preferidas, la mezcla del sabor de la manzana con la lechuga y el tomate le da un toque diferente a la ensalada y es una buena manera que comamos la manzana, que a mi particularmente no me gusta comer sola porque me da mas sensación de hambre¡¡

Ingredientes para 4 personas
1 lechuga iceberg
2 manzanas
2 tomates
1 cebolla
1 lata atún
Aceite, vinagre y sal

Lavar y trocear tanto la lechuga, tomate como la manzana. Poner el atún
Aliñar a gusto con sal, aceite y si te gusta con vinagre de manzana o vinagre de Modena
Mi Amama tenía un dicho para las ensaladas: "Ensalada salada, poco vinagre y muy aceitada" y así las
hago¡¡¡

This is one of my favourites salads, the mixture of the apple´s flavour with the iceberg and tomatoes gives a different touch to the salad, and it is a good way to eat apple, I , personally, do not like to eat te apples alone as it gives me more hunger sensation but love them in a salad¡¡
My granny used to have a saying to dress the salad: "Salad salted, few vinegar and very oily" it does not rhyme in English but just to show you a little bit of the granny´s wisdom¡¡¡

Ingredients for 4 persons
1 iceberg lettuce
2 apples
2 tomatoes
1 onion
Salt, olive oil and vinegar

Wash and cut the iceberg, tomate and apples
Dress as you prefer with salt, oil and vinager

PINTXOS/TAPAS

Los pintxos y tapas es una de las cosas que más me gustan, porque puedes comer de todo sin llenarte demasiado, aqui os pongo algunas de las que suelo poner en casa cuando tengo gente a comer, son muy faciles de hacer.

Pintxo de bocas:
Bocas de mar
Huevos duros
Mayonesa
Sal

Hervir los huevos, pelarlos y trocearlos muy pequeños
Las bocas de mar las troceais también
Mezclar todo con mayonesa
Poner sobre pan tostado o podeis ponerlo sobre crackers

Pintxo de lomo

Lomo de cerdo rebozado
Pimientos de gernika (los de padron tambien van bien)
Huevo de codorniz

Haceis los lomos rebozados (que sean lomos pequeñitos o solomillo de cerdo mejor). Reservar
Freir los pimientos verdes pequeños. Reservar
Freir los huevos de codorniz
Montar sobre el pan tostado, el lomo, luego el pimiento verde y por ultimo el huevo de codorniz.

Podeis sustituir el lomo por jamón serrano, y es entonces mas sencillo todavia¡¡

Pintxo de sobrasada
Este es facil de verdad, si quereis hacerlo para muchas personas, entonces cubrir una fuente de horno con el pan sobre el que habreis untado la sobrasada, y meter al horno a gratinar, sacar cuando veais que la sobrasada está tostadita.

Pintxos and tapas are very typical from Spain and they are one of the foods i like specially, as you can eat a great variety of things without feeling full-up. Here i put the ones i put at home when i have guess.

Pintxo of surimi
Surimi
Boiled eggs
Mayonesse
Salt

Boiled the eggs and cut it in small pieces
Cut also the surimi in small pieces
Mix both things with the mayonesse add a bit of salt
Toast the bread and fill it with the surimi and eggs

Pintxo of loin
Loin coated in breadcrumbs
Small green peppers
Quail eggs

Coat the loin first with beaten eggs and then with breadcrumbs and fry them. Reserve
Fry the small green peppers, then reserve
Fry the quail eggs
Put over a toasted bread, first the loin, then a green peppers and after the egg and serve

Pintxo of Spicy pork sausage

Cut the bread in loafs, spread the spcy pork sausage, put in a tray and introduce it in the oven and grill them for 5 to 10 minutes and serve inmediately

ARROZ AL HORNO/ RICE IN THE OVEN WITH LEFTOVERS

Con las sobras que nos han quedado del cocido se puede hacer un arroz al horno, aprovechamos el caldo del cocido, los garbanzos y los trozos de tocino y morcillo que hayan sobrado, si os gustan las morcillas se pueden añadir también en rodajas

Ingredientes para 4 personas
2 vasos de arroz
5 vasos de caldo del cocido
Garbanzos, tocino y morcillo que haya sobrado
4 dientes de ajo
1 poco de aceite de oliva

Calentar el caldo en un cazo aparte, mientras poner en una cacerola de barro un poco de aceite y dorar los dientes de ajo con piel, añadir los garbanzos y luego el arroz, con cuidado que no se queme, verter el caldo y dejarlo hervir a fuego fuerte, cuando esté en ebullición bajar el fuego a media-baja potencia y tapar la cacerola, dejar durante 10 o 15 minutos, echando un vistazo de vez en cuando para que el arroz no se pegue al fondo, y comprobando que el arroz esta blando pero no demasiado. Antes de que se evapore el caldo completamente, añadir los trocitos de carne, introducir la cacerola en el horno (calentar previamente el horno) y poneis a gratinar el arroz, cuando este gratinado, apagar el horno, dejar reposar unos minutos y servir. Si os gusta el huevo, podeis batir uno y echarlo sobre la cacerola y meterla al horno para que se gratine.

With the leftovers from the chickpeas stew, we can do a rice in the oven, we take the stew broth, the chickpeas and some pieces of schin and fatty pork leftover, if you like blackpudding you can add them in slices.

Ingredients for 4 persons
2 full glasess of rice
5 full glasses of broth from the stew
Chickpeas,schin and fatty pork from leftovers
4 garlic cloves
A bit of olive oil

Heat the broth separately, meanwhile put in a casserole a bit of olive oil, fry the garlic cloves entires with their skin, add the chickpeas, then add the rice and remove taking care not to burn the rice, pour the hot broth and let it boiled at high fire, then low down the fire to mid-low potency and cover the casserole, leave for 10 to 15 minutes, looking from time to time so the rice do not stick in the bottom of the casserole, taste to check that the rice is done. Before the broth evaporates completely, add the meat leftovers, introduce the casserole in the oven (previously heat the oven) so the rice and the meat golden and is crispy. Then serve

COCIDO GARBANZOS/CHICKPEAS STEW

Con la llegada del Otoño poco a poco va entrado el frío en el Sur y como tengo prometido a mi marido a finales de Septiembre empiezo la temporada de los cocidos, plato que le encanta y que me ha pedido hasta en Agosto¡¡¡ pero en vista de las calorías y sudores que me daban cada vez que se los hacia en plena canícula, me planté e instauré mis temporadas, el cocido los dejo de hacer en Junio porque ya en esa época empieza a apretar el calor hasta como he dicho bien entrado el otoño.
Este cocido es una mezcla del que hace mi amatxu y el que hacia mi suegra, y la verdad no me sale mal del todo...sobretodo la sopita que recuerdo que mi aita me decía que levantaba hasta los espíritus. Probarlo y me diréis como os ha salido¡¡¡
Ingredientes para 4 personas:
2 muslos y contra muslos de pollo
300 gramos de morcillo (o zancarron)
300 gramos de tocino fresco (no salado)
1 rama de apio
1 puerro
1 o 2 zanahorias
Medio kilo de garbanzos lechosos (a mi me gustan de la marca Koifer porque son los únicos que se ponen blandos con el agua tan dura del Levante, no tengo que echarles ni bicarbonato)
1 diente de ajo
1 poquito de perejil
1 patata mediana por persona

Como el agua de la zona de Levante es bastante dura,suelo poner el cocido en una olla express pero a fuego lento, los garbanzos se quedan muy melosos y blandos y las carnes no se deshacen así.
Lleno la olla de agua hasta el borde donde están las asas, en frió le pongo el tocino y el morcillo, junto con la zanahoria pelada, el apio y el puerro limpios previamente.
Cuando el agua está caliente, añado los garbanzos y dejo que espume y con una rasera le quito la espuma, acto seguido le añado el pollo, dejo otra vez que espume. Entonces cierro la olla express y dejo que se vaya haciendo a fuego moderado una hora más o menos.
Con cuidado que no deje de hervir, aparto del fuego la olla y la abro para poder echar las patatas previamente peladas (no partirlas, si ponéis una patata mediana por persona se hará muy bien entera y no se deshará) inmediatamente ponéis la olla otra vez en el fuego pues si dejáis que pare el hervor los garbanzos se quedarán duros. Le añadís el diente de ajo picado y el perejil picado y un poco de colorante alimentario. Cerrar otra vez la tapa y dejar durante 15 minutos.
Abrir y servir
Si queréis poner una sopa, una vez hayáis hecho todo, sacáis caldo y lo ponéis en una cazuela aparte dejando que hierba, le echáis un puñadito de fideos finos por persona, estará hecho en 5 minutos.
Con este cocido yo tengo para varios días, pues si no tomo la sopa el mismo día por la mañana, la preparo para cenar, al día siguiente hago un arroz al horno con el caldo y los garbanzos sobrantes (otro día os explico como se hace), y si todavía te ha sobrado puedes hacer ropa vieja que es simplemente poniendo en una sartén con aceite los garbanzos y la carne, dejando que los garbanzos se queden bien frititos y crujientes.
.
 Otra idea que hace mi madre es coger la carne y hacer una salsa de tomate y ponerlos en una cazuela de barro con unos pimientos asados y morcilla de burgo, sale delicioso.
Otra idea que pondré otro día es hacer unas pelotas con el cocido, se preparan y se ponen con el caldo a hervir durante media hora y se sirve de primer plato, después se come el resto del cocido, es muy típico de Murcia.

With the Autumn season arriving, it is getting cold here in the South of Spain and as i promised my husband, i start to cook stews as it is a dish he loves more, he also had asked me to do them in August¡¡¡ but in view of the heat and the sweats i have each time i did them, i claimed and i only would do them from October till the beggining of June.
This stew is a mix of the ones my mum does and the ones that my mother in law used to do, and to be honest i think i have improved them..

Ingredients for 4 persons
2 chicken legs and thighs
300 grs shin
300 grs fresh fatty pork (not salted)
1 celery leaf
1 leek
1 or 2 carrots
Half a kilo of chickpeas
1 garlic clove
A bit of persil
Colouring food
As in this Mediterranean part of Spain the water is too hard, i put the stew in the pressure cooker at medium fire.
Fill the pressure cooker with cold water till the handle, add the shin and the fatty pork together with the peeled carrot, the celery and leek previosuly cleaned.
When the water is hot then add the chickpeas and leave this to skim then with a skimmer take out the skim, then add the chicken and leave it again to skim. Close the pressure cooker and leave it at moderate fire for around one hour .
slow fire, so chickpeas become softer and the meat do not break up.
Open the pressure cooker with care so that the water does not stop boiling (if it does this the chickpeas become hard), add the potatoes (do not slice them, put them whole one medium size potatoe per person), inmediately put the cooker again in the fire. Then you add the chopped garlic and persil and a bit of food colouring. Close the cooker and leave it at medium fire for 15 minutes
Open and serve
If you want to make a soup, once you have done everything, take a bit of the broth and put it in another casserole and when it is boiling add the noodles, in 5 minutes they will  be done.
With this stew i have for some days, if i do not eat the soup in the lunch and prepare it for the dinner. The following day i do a roasted rice with the broth and meat leftovers, also if you have more leftovers you can do what we call here "old cloth" which is frying in a saucepan the chickpeas and the meat, the chickpeas will be very crunchy in this way.
Another idea that my mum does is to take the meats, make a tomate sauce and put it all together with roasted red peppers and blackpudding, this is delicious.
One of this days i will show you how to do meatballs and boil them in the soup, it serves as first dish and after you can eat the rest of the stew, this is very typical from the Mediterranean area.

PISTO / SPANISH RATATOUILLE

El pisto es muy facil de cocinar, lo puedes acompañar con un huevo frito, o pochar el huevo en la misma cazuela del pisto, incluso puedes batir el huevo y mezclarlo con el pisto. A mi me gusta que el pisto no deshaga mucho y tomar los vegetales tiernos pero con cuerpo.

Ingredientes para 4 personas:

150 gr de cebolla
2 pimientos verdes
1/2 kilo tomates rojos maduros
600 gr de calabacín
1 huevo de codorniz por persona
Aceite
Perejil
Sal
Pan frito

Se pelan los calabacines y se trocean en cubitos
Se trocea la cebolla picadita y el pimiento verde y se echan en una sarten a la que habremos puesto aceite en el fondo, y se deja que se vaya ablandando a fuego lento durante unos 15 minutos.
Se escalda el tomate, se pela, se le quita las semillas y se trocea
Se echa a la sarten el tomate y los calabacines troceados, se va moviendo bien durante unos 20 minutos hasta que este todo blando, si está liquido se le aviva el fuego, si está espeso se le echa un poquito de caldo o agua caliente.
Mientras se frien los huevos de codorniz, se reservan
Freir el pan en triangulos y reservar.
A la hora de servir se acompaña el pisto con el huevo de codorniz y el pan frito.
Se espolvorea perejil picado, aunque a mi también me gusta echarle un poco de albahaca picada que le da otro toque de sabor.

Ratatouille is very easy and simple to cook, you will only need patience as it has to be done at slow fire, you can accompany this with fried eggs, or putting the eggs onto the ratatouille and also you can beat the eggs and add them to this.

Ingredients for 4 persons
150 grs onion
2 green peppers
Half kilo of red mature tomatoes
600 grs courgettes
1 quail egg per person
Olive oil
Salt, persil
Fried egg
Peel the courgettes and cut them in cubes
Peel and chop the onion and the green peppers, pour in the saucepan where you have previously added olive oil in the bottom. Leave it until they soft at slow fire during 15 minutes.
Scald the tomatoes, peel them, take out the seeds and chop
Pour the tomatoes and the courgettes in the saucepan, remove well during 20 minutes at slow fire until everything is soft, if it is too liquid high the fire, if it is too thick add a bit of broth or hot water.
Meanwhile fried the quail eggs and reserve
Fry the bread in triangles and reserve
At the time of serving accompany the ratatouille with the quail egg and fried bread.
Sprinkle a bit of persil, i also like to sprinkle a bit of basil so it has a nice taste

ENSALADA DE GRANADAS/POMEGRANATE SALAD

Bueno, que decir que estamos siempre a dieta...y después de un verano loco y de comer lo que me ha apetecido (bueno casi todo de lo que me ha apetecido), ahora toca restringirse un poco, asi que toca ensalada.
Fue mi tia la que me enseñó otra manera de comer las granadas, pues mi ama siempre me las ha puesto lavadas y bañadas con un poco de azucar, como muestro en una parte de la foto.
Se puede hacer con cualquier tipo de lechuga, pero como más rica está es con escarola, el sabor amargo de la escarola contrasta con el dulce de la granada. Además le he dado otro toque afrutado con la manzana que siempre me gusta poner en las ensaladas.

Ingredientes:
Lechuga (mejor escarola)
Granada
Manzana
Sal,aceite y vinagre

Es muy simple, lavais bien la lechuga y la troceais, pelar y cortar en gajos la manzana, coger la granada abrirla e ir quitando las granadas, cuidando de dejarlas bien limpias. Aliñar a vuestro gusto, con vinagre de modena tiene que estar también muy bueno

We are always on diet..and after a crazy summer where i have eaten what i liked (well nearly), now it is time to return again to the good path. It was my Auntie who taught me to eat the pome-granates in a different way that i was used to, as my Mum used to give me the pomegranate, washed and cleaned and with a bit of sugar, as i show you in one part of the photo. But in fact you also can eat them with lettuce, you can use any type of lettuce but it matchs prefectly with scarole, as its bitter tastes goes well with the pomegranate. Also i have included some apple pieces which is one of my favourite fruit to put in my salads.

Ingredients:
Lettuce (preferably scarole)
Pome-granate
Apple
Salt, olive oil and vinegar

It is so simple to do it, wash properly the lettuce and cut it in pieces, peel and cut the apple, open the pome-granate and take out all the seeds and clean them. Dress at your taste, with Modena vinegar it is also really tasty.

TALOS CON MORCILLA CONCURSO EMBUTIDOS RIOS

Los talos son un producto típico del Pais Vasco, donde desde el siglo XVII se llevan haciendo en los caserios en sustitución del pan, ahora sólo se suelen ven en los mercados de ganaderos y ferias como la de Santo Tomas, es curioso como en casi todo el mundo se ha preparado esta masa con harina de maiz, en lationamerica podemos ver las arepas, en Mexijo están los famosos burritos, en Belgica los crepes, en Inglaterra son famosos los pancakes e incluso en la India una de sus comida base es el pan de monja y el pan pita. Los vascos la importaron de america y empezaron a cultivar en sus caserios el maiz para luego molerlo y hacer la harina de estos talos. Normalmente en las ferias te lo dan con las jugosas txistorras, lomo y morcilla de puerros, hoy como seguimos con el concurso de Embutidos Rios junto con Cocina con poco y el Hotel Don Pablo, he pensado hacer los talos con morcillas de burgos acompañados de unos pimientos de piquillo troceados.
La verdad es que los ingredientes para hacer los talos son muy simples, harina de maiz (unos 250 gramos), sal y un poco de agua, como es la primera vez que los hago me ha llevado más tiempo del normal porque como con todo, lo primero es cogerle el "caire", en el primer intento por lo visto eché más agua de lo normal, pues tienes que hacer un volcan de harina y dejar un hueco en el centro para echar el agua caliente con un poco de sal, y luego empezar a amasar, la harina de maiz no es facil de amasar, al principio se cuarteba a trozos y luego como si tuviera vida propia se empezaba a expandir y tenia que estar con todas las manos controlando que no se me cayera por debajo de la encimera¡¡¡ mal asunto..harta y pringada entera, lo dejé.
Luego por la tarde, empeñada en volver a hacerlas, esta vez fui echando el agua poco a poco, si veia que se empezaba a coger vida propia, me ponia un poco de harina sobre las manos, hasta que la masa empezó a coger consistencia y a moldearse bien. Cogi un paño de cocina humedo y lo dejé reposar durante media hora como habia visto en otra receta de internet. Después vas cogiendo trozos de la masa y las vas haciendo bolas, pones un poco de harina en la encimera y empiezas aprentado con la parte interna de los puños y desde dentro vas extendiendo la masa hacia fuera, aqui os pongo un video de la feria de Abadiño y como las expertas manos de las aldeanas van dando forma a los talos.
Una vez tienes hechos los talos, coges una sarten (si la tienes de hierro mejor) o una plancha electrica, y vas poniendo los talos dandole vueltas de vez en cuando hasta que cojan color.
Fries las morcillas y con el mismo aceite de freir las morcillas coges unos pimientos de piquillo troceados y los fries un poco.
Echar la morcilla y el pimiento sobre los talos, enrollar y comer.

BIZCOCHO AL LIMON /LEMON CAKE

Como os comenté en mi post de la tarta de queso, nunca me han salido los bizcochos que hacia mi suegra a pesar de haberlo intentado muchas veces, y ahora creo el saber porque..el otro dia hablando con mi cuñada le comenté el tema y ella me dijo que tampoco le salia ese bizcocho a pesar de hacerlo paso a paso tal como mi suegra nos lo dijo, hemos llegado a la conclusión que el secreto para que ese bizcocho tan esponjoso y bueno se lo ha llevado mi suegra con ella a la tumba y que le ha faltado decirnos algun ingrediente o paso para que salgan bien. De todas maneras mi cuñada me ha dado la receta de un bizcocho muy facil de hacer y que no os va a dar problema ninguno, pues las medidas son las exactas y siempre os saldrá bien¡¡¡
Además como prometi a mis amigitos de y porque creceran? les hecho este bizcocho y la impresión que me ha dado  es que les ha gustado mucho, la señorita croqueta se empeñó en tomarlo de aperitivo y no esperó a tomarselo después de comer¡¡¡

Ingredientes
1 yogurt de limón (usar el vaso de este yogurt como medida para el resto de ingredientes)
3 huevos
2 vasos de azucar
3 vasos de harina
1 sobre de levadura Royal
1 vaso de aceite

1) Batir los huevos y echar el yogurt
2) Echar el azucar
3) Echar la harina y la levadura Royal
4) Echar el aceite

Mezclarlo todo bien, echar en un molde que previamente habeis untado con mantequilla, mientras ir calentado el horno unos minutos antes, introducir el molde en el horno y dejar a una temperatura de 180ºC durante unos 30 minutos o algo más, depende de cada horno. Sabreis que está hecho cuando con una aguja pincheis en el bizcocho y os salga limpio.
Ideas: podeis luego partir el bizcocho por la midad y untarlo con chocolate, o simplemente envolverlo todo en chocolate, eso va a vuestro gusto

As i commented in my cheese cake post, i never had made properly the cakes that my mother in law used to do despite the fact i have tried to do it a lot of times, now i think to know why...the other day talking to my sister-in-law i brought the subject and she replied to me that she also has tried to do thousand times with no success, therefore we have reached to the conclusion that the secret for that spongy cake has been taken by my mother in law to her tomb as we think we miss one ingredient or step when we do it. Anyway my sister in law has given me this simple recipe to do a nice cake, the measures have to be exact for the success of this cake, you will never fail¡¡¡
Also i promise to my dear little friends of why they do grow?  to make a cake for them, my impresion is that they liked a lot, as little Miss Croquette wanted to eat it as appetizer before the main meal instead of eating it as dessert¡¡¡

Ingredients:
1 lemon yogurt (use the package as the measure for the rest of ingredients)
3 eggs
2 cups of sugar
3 cups of white flour
1 bag of baking powder
1 cups of olive oil

1) Mix the eggs with the yogurt
2) Add the sugar
3) Add the flour and the baking powder
4) Add the olive oil

Mix everything properly, pour in a baking mould which you have previously greased  with butter, meanwhile preheat the oven for a few  minutes, introduce the baking mould in the oven and leave it a 180ºC during around 30 minutes, depends on the oven. You will know that it is done when you introduce a needle in the cake and it is clean.
Some ideas: you can open in half the cake and spread chocolate in it, or simply spread the chocolate all over the cake.

GAZPACHOS MANCHEGOS/LA MANCHA´S FLATBREAD STEW

Casi todas las recetas que he aprendido son de mi amatxu (madre) pero cuando te casas lo normal es que también vayas aprendiendo las recetas que le gustan a tu marido y que por lo general son las que le solía hacer su madre, mi suegra era de Alcoy, un pueblo del interior de Alicante y cocinaba realmente muy bien, de ella he aprendido muchos platos que antes no conocía y que hoy en dia todavia me cuesta cogerles el punto porque son bastante laboriosos, este plato es uno de ellos, plato supernutritivo y muy tipico de la zona de la Mancha y de pueblos del interior de Alicante. Antiguamente se hacia la torta sobre unas ascuas de leña y luego se le echaba en medio el guisado de conejo o de liebre, perdiz, es un plato muy contundente y con un gran sabor. Hoy en dia es más dificil hacer la torta y por eso ya la venden hecha y cortada para facilitar el trabajo, pero sinceramente el sabor que tiene la torta recien hecha y que vaya absorbiendo los jugos del guisado que se le pone encima no tiene ni color. Aqui intentaré mostraros una forma facil de hacerlo, otro dia quizas me atreva a hacer la torta yo misma, ya veremos...

1 paquete de tortas cenceñas
Medio conejo
1 cebolla
1 diente ajo
1 tomate natural triturado
250 grs de setas o rovellones
Prebella
Sal y aceite oliva


Cortamos a trozos pequeños la cebolla y el ajo y dejamos pochar bien en la olla express, una vez pochados, poner el conejo troceado, dorar bien.
 Echar unas 8 cucharas de tomate triturado y remover bien, el truco de este guiso es sofreir muy bien el conejo.
Poner las setas partidas, remover bien.

Mientras calentar agua (mas o menos un litro y medio) y echarla al sofrito. Si tienes caldo de ave o de cocido  le puedes echar un poco  y estará más gustoso.
Cuando este hirviendo echar la especia prebella que le va a dar un gusto especial al guisado
Hervir durante media hora, si es en olla express con quince minutos bastará para que el conejo esté tierno.

Abrir y poner los gazpachos que vienen ya troceados, mezclar todo y dejar cociendo durante unos 10 a 15 minutos a fuego medio lento, con cuidado que no se peguen los gazpachos.

 Procurar que no se les vaya el caldo aunque eso va en gustos, a mi me gusta dejarlo un poco caldosito. Apagar el fuego y dejar reposar tapado unos 5 minutos y luego servir.



Most of the recipes are from my amatxu (mother) but when you get married the normal thing is that you learnt some of the recipes that your husband likes and in general these ones are recipes from your mother-in-law. Mine was from Alcoy, a town in the interior part of Alicante, she was a really good cook and i have learnt from her a lot of delicious recipes which i have never heard of them, this recipe is one of them, a powerful stew very typical from La Mancha and from the interior part of Valencia. In the old times they used to do a big flatbread made over a wooden fire and then they used to put the stew over this flatbread, the stew was made with rabbit or hare or partridge. It is a strong stew with a lot of flavour. Today is quite difficult to made the flatbread, therefore you can find them already made in the shops, but i prefer the homemade ones as the taste is completely different, perhaps one day i will do myself.

Ingredients for 4 persons:
1 bag of flatbread cut in small pieces
Half a rabbit
1 onion
1 garlic clove
1 can natural smashed tomatoe
250 grames mushrooms
Prebella (a special spice typical in the mediterraean mountains)
Salt and olive oil

We cut in thin slices the onion and the garlic clove, let´s them soft in the pressure cooker, once done, put the rabbit in pieces and golden properly. Put 8 spoons of smashed tomatoes and remove. The trick for this stew is to do a good sauté.
Place the sliced mushrooms, meanwhile heat the water apart (around 1,5 litre) and pour in the stew.
Once it is boiling stir the prebella on it.
Boil during half an hour, if you use the pressure cook then with 15 minutes will serve to soft the rabbit.
Place the flatbread cut in small pieces, mix everything and leave cooking around 10 to 15 minutes a medium fire. Be careful that the flatbread does not stick in the casserole. I like to leave them with a bit of liquid. Switch off the fire and leave them for 5 minutes, then serve.
