No se si recordareis el <a href="http://recetasdeamatxu.blogspot.com.es/2012/02/pollo-con-pina-chicken-with-pineapple.html" target="_blank">pollo con piña</a> que hice para un concurso de los <a href="http://criatradicionalgallinasdemos.blogspot.com.es/" target="_blank">Gallos del Mos</a>, es una raza gallega de gallos que son ecologicos y se crian con maiz. Pues al final decidieron que todos los que habiamos participado nos darian un gallo para que pudieramos cocinarlos y asi probarlos. Ayer recibí el gallo y estoy encantada, lo he troceado, he guardado la carcasa para hacer un consomé al jerez, las pechugas para rellenarlas y he preparado el muslo, el contramuslo y las alitas a la pepitoria. Este plato es un clasico de la cocina española y a mi me ha gustado mucho.<br />

Ingredientes para 4/6 personas:<br />
1 gallo de 1 kg y medio<br />
1 cebolla<br />
2 dientes de ajo<br />
50 gramos de almendras peladas<br />
fritas<br />
4 cucharas de aceite<br />
Hebras de azafran<br />
2 rebanadas de pan frito<br />
2 huevos duros<br />
1/4 litro de vino blanco<br />
1 rama de perejil<br />
Pimienta negra en grano<br />
Sal<br />

Dorar los trozos del gallo en aceite bien caliente y reservar<br />
En ese mismo aceite dorar las rebanadas de pan y reservar<br />
Con el mismo aceite rehogar la cebolla y el ajo durante unos minutos. Echar la harina, el laurel y el perejil.<br />
Revolver y verter el vino blanco (también le he puesto un poco de jerez), cuando empieza a hervir, echar todo en una olla express (la salsa y el gallo). Dejar a fuego suave durante casi una hora.<br />
Mientras en un mortero machacar las hebras de azafran, las almendras, el pan frito y las yemas de los huevos duros hasta que se forme una pasta.<br />

Ya cocido el gallo retirarlo trozo a trozo de la olla y colocarlo en una cazuela de barro. Mezclar a la salsa, la pasta con las almendras y el pan y dejar hervir durante unos minutos. Luego pasar esta salsa con el pasapures por encima del gallo y servir.<br />

At the end they decided to give a cockerel to those who had participated so we could cook and taste them. Yesterday i received the cockerel and i am very happy¡¡¡, i have cut it, kept the bones to do a fine soup with Sherry, the breasts is to fill them up and i have prepared the cockerel legs and wings with an almond and eggs sauce. This dish is a clasic of the Spanish cousine and i have enjoyed a lot¡¡¡<br />

Ingredients for 4/6 persons<br />
1 kilo and a half of cockerel<br />
1 onion<br />
2 garlic cloves<br />
50 grames of toasted almonds<br />
4 spoons of olive oil<br />
Saffron threads<br />
2 loaf of bread<br />
2 boiled eggs<br />
1 glass and a half of white wine<br />
Parsley<br />
Salt<br />

Fry the cockerel pieces in hot olive oil and reserve<br />
In the same oil fry and golden the bread and reserve<br />
With the same oil fry the chopped onion and garlic for some minutes. Put the flour, the bayleaf and the parsley, remove well and pour the white wine (i also have added a bit of Sherry), once starts to boil, place everything in the pressure cooker (the cockerel and the sauce). Leave at soft fire for around an hour<br />
Meanwhile in a mortar put the saffron threads and smash them, add the almonds, the fried bread and the yolks of the eggs and smash all until it becomes a paste.<br />
<br />
Once the cockerel is cooked place it in a casserole. Mix to the sauce the almonds paste and leave cooking for 4 or 5 minutes. El bacalao es uno de sus platos estrellas, hay mil maneras de prepararlo y a cada cual más rico, esta receta la podeis preparar con el bacalao fresco, o salado (tenerlo en remojo previamente unas 24-48 horas dependiendo del tamaño) o lo podeis comprar ya desalado en su punto de sal. Hace unas semanas me invitaron a comer en un Restaurante y pusieron el bacalao de esta manera y me encantó, creo que la receta se aproxima bastante a lo que comí que estaba muy rica y espero que si vosotros probais a hacerla os saldrá igual de rica.<br />

Ingredientes para 4 personas:<br />

4 lomos de bacalao<br />
4 patatas grandes<br />
1 huevo<br />
Harina<br />
Aceite de oliva<br />

Para la salsa tartara:<br />
2 huevos<br />
1 cucharada de mostaza (me gusta a la Antigua que se ven los granos)<br />
8 cucharas de mayonesa<br />
50 gramos de alcaparras<br />
50 gramos de cebolla<br />
1 rama de perejil<br />
<br />
Cocer las patatas junto con los dos huevos, una vez cocidos, pelar las patatas y los huevos.<br />
<br />
Hacer la salsa:<br />
Cogeis las yemas cocidas y las pasais por el tamiz, añadirle la mostaza y batir , añadirle la mayonesa, mezclar bien. A continuación le añadis las alcaparras, el perejil, la cebolla y la clara de los huevos cocidos todo muy picadito. Guardar en la nevera<br />
<br />
Con un molde redondo ponemos en cada plato las patatas cocidas que hemos cortado en rodajas, haciendo dos o tres capas de patatas, desmoldar y reservar.<br />
<br />
Rebozar el lomo con la harina y luego el huevo y freirlo bien en aceite de oliva muy caliente, hecho esto poner el bacalao sobre papel de cocina para quitarle el exceso de aceite.<br />
<br />
Quitamos el molde de la patata y vertimos por encima la salsa tartara. <br />
Por último colocamos el lomo de bacalao encima<br />
Adornamos con un poquito de perejil y servir<br />

Cod is one of the Star Dishes for this season, and there are thousands of ways to prepare it and each one more delish than the other¡¡¡ you can prepare this recipe with fresh cod or salted ( soaked in water during 24-48 hours depending of the size to desalt it) or you can buy it unsalted. A few weeks ago Iwas invited to a restaurant and they cooked the cod in this way and I loved it¡¡ I think this recipe aproximates to the one I ate and hope that if you cook it, it will result delicious for you too¡¡<br />

4 cod filets<br />
4 potatoes<br />
1 egg<br />

For the Tarta sauce:<br />
2 eggs<br />
1 spoon of mustard (I prefer the mustard a l`Antique where you can see the grains)<br />
8 spoons of mayonaisse<br />
50 grames of capers<br />
50 grames of onion<br />
1 parsley bunch<br />
<br />
Boil the potatoes (with skin) with 2 eggs, once boiled, peel them<br />
<br />
Make the sauce:<br />
Take the boiled yolks and smashed them, add the mustard and mix it until it becomes a thin cream, then add the mayonaisse and mix well. Add the capers .Then the parsley, the onion and the white of eggs, all finely chopped. Reserve in the fridge.<br />
<br />
With a round mould put in each plate the potatoes which we have cut it in slices, make some layers of the potatoes.<br />
<br />
Coat the cod first in flour and after in battered egg, then fry in a saucepan with hot olive oil. Once done this, put the cod over a kitchen paper to take out the excess of oil.<br />
<br />
Now we are going to present the dish<br />
Pour tartar sauce over the potatoes and place on it the cod<br />
Decorate with a bit of parsley and serve<br />

Para las Crepes:</div>

10 cucharadas rasas de harina</div>
3 cucharadas de azucar<br />
1 cucharada de mantequilla fundida<br />

1 vaso de leche</div>

Batir en un cazo la harina, el azucar,la mantequilla y los huevos, añadir un vaso de leche y seguir batiendo. Luego pasar esta crema (tiene que estar ni muy ligera ni espesa) por el chino para que quede más fina.<br />

En una sarten buena (la que tengais para las tortillas y no se pegue) poner una cucharadita de mantequilla y agregar 3 cucharas de la masa extendiendola bien por el fondo de la sarten, darle la vuelta, iran cogiendo un tono tostado .<br />

Extender un poco de crema de los aguacates con gambas sobre los crepes, enrollarlos , decorar con gambas y cebollinos y servir. También podeis llevar los crepes a la mesa y que cada uno se ponga la crema y se enrolle los crepes, como prefirais.</div>

First we will prepare the avocado and prawns cream<br />
Ingredients for 4 persons:<br />
2 big mature avocados<br />
300 grames of cooked prawn<br />
(reserve some to decorate)<br />
6 spoons of mayonaisse<br />
2 spoons of ketchup or Perrins sauce<br />

Mix the avocados with the prawns and with a fork smashed them until it becomes a cream, add the mayonaisse and the ketchup. Mix all well and reserve<br />
<br />
For the crepes (pancakes)<br />
<br />
Ingredients for 4 persons (2 crepes per person)<br />
10 spoons of flour<br />
3 spoons of sugar<br />
1 spoon of melted butter<br />
2 eggs<br />
1 glass of milk<br />
<br />
Mix in a bowl, the flour, sugar, butter and eggs, then add the milk and mix it. <br />
<br />
In a good saucepan (the one you use for the omelettes and does not stick) put a spoon of butter and pour 3 spoons of the cream, extend all over the saucepan, turn it back, it will get a nice brown colour.<br />

Extend a bit of the avocado cream on the crep, roll them up and serve. You also can take the crepes with the cream apart to the table, then each person will take the crepes to fill and roll them, this is as you prefer, if you have a lot of persons at home the second option will be the best¡¡</div>

Cortar las fresas y los kiwis en laminas, poner un poco de nata en la base de la copa, ir añadiendo una lamina de kiwi y otra de fresa, poner otro poco de nata y añadir otra fila de fruta, terminar con un poco de nata montada y adornar con menta.<br />

Ingredientes para 4 personas</div>

600 gramos de carne picada <br />
(puede ser de ternera o de cerdo)<br />
4 patatas grandes<br />
150 gramos de guisantes<br />
2 zanahorias<br />
Sal , pimienta negra<br />
Salsa Worcetershire (Perrins)<br />

Para la salsa:<br />
1 cebolla<br />
1 cucharada harina<br />
1 vaso vino blanco o jerez<br />

Se cuecen las patatas con piel, la zanahoria a trocitos pequeños y los guisantes pequeños, cuando la patata esté tierna se saca y reserva.<br />
Colar los guisantes y zanahorias y apartar<br />
En una sarten con un poco de aceite se dora bien la carne picada con la sal, pimienta negra y unas gotas de<br />
la salsa worcestershire (opcional) y se reserva.<br />

Las patatas las chafais con un tenedor y una cucharadita de mantequilla, tiene que estar un pure espeso.<br />

Colocar el pure en la fuente de cristal y con el tenedor hacer unos surcos. Meter en el horno a gratinar hasta que veais que se tuesta el pure.<br />
La salsa es opcional:<br />
Generalmente los ingleses usan una salsa que se llama Gravy, aprovechan el jugo de la carne que hayan hecho al horno, le incorporan en la misma llanda una jarrita con maizena diluida en agua y van batiendo en el fuego esa salsa hata que toma una tonalidad oscura. En nuestro caso como no hemos hecho carne al horno, vamos a aprovechar el aceite que ha sobrado de freir la carne picada y echamos la cebolla picadita, se tienen que dorar bien sin quemar, después se le echa una cuchara de harina se remueve bien para que se tueste y se le añade el vino blanco o de jerez, ligar bien y pasar por la batidora. <br />

Cuando se sirva este pastel (poner un salvamantales porque está muy caliente) se pone luego por encima la salsa de acompañamiento, doy fe que estaba muy rica y con ganas me he quedado de repetir pero la patata me engorda mucho¡¡<br />
<br />
<strong><span style="color: #990000;">Truco: lo podeis hacer de un dia para otro, luego es solo cuestión de calentar en el horno el pastel y calentar la salsa aparte.</span></strong><br />

Boil the potatoes with skin, the carrots in small pieces and the small green peas, when the potatoes are done, take apart and reserve.<br />

In a saucepan with a bit of olive oil golden the mince meat with the salt, black pepper and a few drops of Worcestershire sauce (optional) and reserve.<br />

In a deep glass oven tray place first the mincemeat, then over this the carrots and green peas.<br />

Smash the potatoes with a bit of salt and one spoon of butter, make a thick cream.<br />

Place the smashed potatoes on the glass tray and with a fork make some scars. Place it in the oven to grate until you see the potatoes are quite grated.<br />

The sauce is optional<br />

At the time of serving this pie, put the sauce on the top. <br />

8 huevos<br />
100 gramos de gambas <br />
50 gramos de almendras molidas<br />
1 poco de perejil picado<br />
1 clara de huevo<br />
1/2 taza de leche<br />
Sal, harina y media cebolla<br />

Se cuecen los huevos, se enfrian, se parten por la mitad (yo en este caso lo he partido a lo ancho y no a lo largo). Coger las yemas y chafarlas para hacer un puré. Reservarlas<br />
<br />
Cocer las gambas (tener en cuenta que el peso es sin cabeza ni cola), una vez hecho, aplastarlas con un tenedor y mezclarlas con las yemas, añadis perejil picado y la leche, lo poneis al fuego para mezclar bien la masa.<br />
<br />
Coger esta pasta y rellenar los huevos, rebozarlos con un poco de clara batida y freirlos para que estén doraditos (si preferis lo podeis poner en el horno).<br />
<br />
Una vez dorados, ponerlo en una cazuela, mientras en una sarten dorais media cebolla picadita con un poco de aceite de oliva, le echais la almendra molida, removeis bien, añadis un pellizco de harina y un poquito de agua, remover bien hasta que se quede una crema ligerita.<br />
<br />
Verter la salsa sobre los huevos y dejar hervir durante unos 10 minutos en la cazuela con cuidado que no se os peguen los huevos.<br />

Boil the eggs, let them cool, cut in halves, then take the yolks and smashed them. Reserve<br />
Boil the prawns (have in mind that the weight is with no head and tail), once done, smashed with a fork and mix with the yolks, add the chopped parsley and the milk. Put a bit in the fire and mix all well.<br />

Fill the eggs with this mix, coated them with the battered egg white and fry them until golden (if you prefer you can do this in the oven)<br />
<br />
Once golden, place them in a casserole, meanwhile, put a bit of olive oil in a saucepan and fry the half chopped onion, add the smashed almonds, remove and add a bit of white flour and a bit of water. Remove till there is a light sauce.<br />
<br />
Pour the sauce over the eggs and let them boil during 10 minutes in the casserole having care of not stick the eggs.<br />

Cocer las patatas enteras y sin piel. Cuando esten cocidas se escurren y se meten en el horno para que se sequen. Pasar por el tamiz, os tiene que quedar un pure muy espeso, le agregais la yema del huevo, la mantequilla y un poco de sal, amasar y mezclarlo bien. Os aconsejo que lo dejeis unas horas en la nevera para que se ponga espesa la masa.<br />
<br />
Cortar el chorizo en rodajitas pequeñas y le quitais la piel. Coger con una cuchara la masa (espolvorear las manos con harina sino se os va pegar el puré) haceis una tortita, poneis en el centro el chorizo o una bolita de paté. Redondear la bola, a medida que las vayais haciendo ponerlas en un plato.<br />
<br />
Luego las pasais por la clara dle huevo y freir hasta que estén doradas.<br />

Take the smasher and made a thick cream, add the egg yolk, the butter and a bit of salt. Melt well. I advise you to put this in the fridge so the cream gets thicker and you will be able to work with it.<br />

Cut the chorizo in small rings and take out the skin. With a spoon take a bit of the cream (spread a bit of flour in your hands so it does not stick), make a hole in the center and introduce the chorizo or whatever you like. Make a ball with it and soak them in the white of the egg (previously battered), introduce them in a saucepan which has hot olive oil and fry them until golden<br />

También me lo he pensado mucho con el arroz con trufa que me enviaron, al final pensé que lo mejor era lo más simple, sólo con un poquito de champiñones para que no se perdiera el sabor de la trufa.<br />

4 filetes grandes de ternera<br />
2 vasos de arroz con trufa<br />
4 vasos de agua<br />
100 gramos de champiñones<br />
2 zanahorias<br />
1 cebolla grande<br />
2 dientes de ajo<br />
1 lata de paté<br />
1 vaso de vino blanco<br />
1 vaso de salsa de tomate<br />
Un poco de romero<br />
Un poco de tomillo<br />
Aceite de oliva<br />
Una cucharada de miel<br />
Sal<br />

Cortar en trocitos pequeños la zanahoria, la cebolla, y el ajo, meterlo en el horno y espolvorear por encima el tomillo y el romero, añadir un poco de aceite, el vino blanco y un poco de agua, dejar que se haga a unos 180ºC durante media hora.<br />
Mientras poner en una cazuela un poco de aceite y un poco de ajo picado, añadirle los champiñones troceados y dorar bien, echar el arroz, remover bien y poner el agua, cuando empieze a hervir bajar el fuego y tapar durante unos 15 minutos. Vigilar para que se quede el arroz suelto y no se pegue a la cacerola. Cuando esté hecho apartar.<br />
<br />
Coger la ternera y untarle el paté, hacer unos rollitos, poner un poco de aceite en una sarten y dorar la carne, cuando esté dorada echarle un poco de miel por encima, introducir los rollitos en el horno y dejar todo unos diez minutos más. Si lo haceis con cerdo, entonces meterlo antes directamente con las verduras y dejar que se haga durante 40 minutos. La ternera no se debe hacer demasiado sino se reseca.<br />
<br />
Sacar del horno las verduras ponerlas en una cazuela, añadir el vaso de salsa de tomate y una cucharada de miel, dejar un rato que reduzcar la salsa y pasarla por la batidora, si quereis que os quede más fina pasarla por el chino.<br />
A la hora de emplatar, poner un poco de arroz en cada plato, con los rollitos de ternera y la salsa por encima.<br />

This week I have been thinking on what to cook with the presents won in the cooking contest of <a href="http://www.saboores.com/" target="_blank">Saboores</a> and it has not been easy, at the end I decided to do a version of a Karlos Arguiñano recipe but instead of doing it with pork i have done it wit veal, a good way to do it instead the typical grilled version. I have also thought a lot about how to do the rice with the truffle, the best is to do it simple, white rice with a bit of mushrooms so you do not lost the truffle taste.<br />
Ingredients for 4 persons:<br />
4 big veal steaks<br />
2 glasses of rice with truffle<br />
4 glasses of water<br />
2 carrots<br />
1 big onion<br />
2 garlic cloves<br />
1 jar of paté<br />
1 glass of white wine<br />
1 glass of tomatoe sauce<br />
A bit of rosemary<br />
A bit of thyme<br />
Olive oil<br />
One spoon of honey<br />
Cut in small pieces the carrots, onions and garlic, introduce them in an oven tray and add salt, thyme, rosemary, the white wine and a bit of water, leave it during half an hour at 180ºC.<br />
Meanwhile put in a casserole a bit of olive oil and chopped garlic, add also the chopped mushrooms and golden, put the rice, remove and pour the water (4 glasses per 2 of rice), once it is boiling low down the fire and cover. Watch the rice is ready and be careful that the rice does not stick to the casserole. Once done, reserve<br />
<br />
Now it is the turn of the veal, take each veal steak and spread the paté on each one, make rolls with them, put a bit of olive oil in a saucepan and fry the meat, then add one spoon of honey and golden. Introduce the rolls in the oven with the vegetables and leave it for around 10 minutes.<br />
<br />
Then, take out the vegs and put them in a casserole, add the glass of tomate sauce and one spoon of honey, leave for a while till the sauce reduces and mix in the mixer.<br />

Una de las tortillas más típicas andaluzas es la tortilla del Barrio de Sacromonte en Granada, hay muchas versiones de la misma, pero la más comun está hecha con huevos, sesos,criadillas, guisantes,pimientos, cebolla, en este caso unos le echan patata y otros no. El caso es que no me gustan ni los sesos ni las criadillas con lo que le he añadido trocitos de bacon, cada uno le puede poner lo que más le apetezca y en las cantidades que quiera, si te gustan mucho los guisantes pues echale más, en mi caso le he echado un poquito de todo para que no prevalezca más un sabor que otro y también le he echado patata porque me gusta mucho.</div>

One of the most typical andalusian omelettes has its origins in the Sacromonte Quarter in Granada, there are a lot of versions of this omelette, but the most common is done with eggs, brains,testicles, green pees, peppers, onions, some put potatoes other not. The thing is that i do not like brains or testicles, so i have added bacon pieces, each person can put what they most like and in the quantities they prefer, if you like green peas put more, in my case i have added a bit of everything in order there is not a taste stronger than other, i have also added potatoes as i love them.</div>

Paso 4: Poner en la sarten un poco de aceite, tanto en su base como en los lados, asi no se pegará el huevo, primero el fuego alto y en cuanto echeis las patatas bajais el fuego para que no se queme la tortilla, coger un plato o un vuelca tortillas y dar la vuelta, hacerlo asi varias veces hasta que la tortilla esté cuajada a vuestro gusto, a mi me gusta que esté cuajada pero no tanto como para que se quede muy seca por dentro.<br />

Se le llama Cantonal porque Cartagena fue en su dia un cantón independiente y están muy orgullosos de serlo, el ser Cartagenero se lleva en el alma, en sus fibras más internas, un puerto de culturas con más de 3000 años de antiguedad que no es poco¡¡ Los productos que lleva esta ensalada son muy típicos de esta zona, los ahumados y salazones se hacen desde tiempo en esta tierra, ya los romanos (que eran muy inteligentes cogiendo lo mejor de cada zona donde conquistaban) hacian el garum (una especie de pasta hecha con el pescado en salazón). Por esta zona suelen vender los ahumados ya cortados en trocitos con aceite, pero podeis usar también los paquetes con laminas de ahumados tanto de salmón como de bacalao)</div>

March is the month of the Aragonese Olives in <a href="http://recetarioaragones.blogspot.com/" target="_blank">El Recetario Mañoso</a>, as i do not live in Aragon but i love olives, i have done a typical recipe from Cartagena which have black olives (i hope you forgive me they are not from Aragon but i have not found them here), usually this salad has "cuquillo" olives, a type of small black olives but it is not now its season.</div>

The salad is called "Cantonal" because Cartagena was on its days an Independent Canton in Spain and they are very proud of its 3000 years of antiquity which is a lot¡¡. The products of this salad are also very typical from this Area, the smoked and the salted fish are made since long time ago here, in Roman times (who they were very intelligent taking the best of each place) made the "garum" a kind of fish paste. </div>

1 cebolla picada<br />
2 zanahoria troceada<br />
2 diente ajo picado<br />
150 gramos de guisantes<br />
2 vasos de vino blanco<br />
2 vasos de agua<br />
Pimienta negra en bola<br />
1 hoja de laurel<br />
4 cucharas de tomate natural triturado<br />

Dorar la cebolla picada, cuando coga color echar la magra de ternera y el diente de ajo picado, remover y dorar bien, añadir el tomate yel laurel, seguir removiendo bien con cuidado que no se pegue en el fondo.<br />
Añadir los guisantes y la zanahorias cortadas en cubitos<br />
Quitar la hoja de laurel porque sino le dará much sabor al guisado<br />
Echar el vino y el agua <br />
Poner la sal y unas bolitas de pimienta negra <br />
<br />
Si lo dejeis hacer en la cazuela a fuego media tendrá que estar sobre una hora, si lo haceis con la olla express con media hora de tiempo a partir de que empieze a silbar será suficiente. Si quereis lo podeis acompañar con patatas fritas, o podeis echar al caldo unas patatas para que se cuecan, pero ya sabeis que si os sobra las patatas al dia siguiente no están buenas.<br />

4 spoons of natural smashed tomatoes<br />

Golden the chopped onion, then add the veal loin and the chopped garlic clove, remove and golden throughly, add the tomatoes and the bayleaf, keep moving taking care that it does not stick in the bottom of the casserole.<br />
Add the green peas and the carrot<br />
Take out the bayleaf because if not the flavour would be too strong<br />
Pour the white wine and the water<br />
Add the salt and some black pepper grains<br />

If you leave it in a casserole at medium fire the stew will be ready in one hour, if you do it in the pressure cooker with half an hour counting from the whistle of the cooker will be enough. You can accompany with french fries or you can add some potatoes to the stew so they cook at the same time, but please have in mind that if you have leftovers of this , the potatoes at the following day are not good to eat as they become too soft.<br />

Os puedo decir que fue una de las mejores cenas que he tenido en Nochevieja, la cordera porque a pesar de no llevar ninguna salsa, estaba muy tierna y con un magnifico sabor que a su vez era realzado por la escarola.</div>

I remember to have spent years ago a Christmas Eve in the Spanish Pyrinees, the owner of the small country hotel where we were lodged made a wonderful dinner for that night, it was roasted lamb in the wooden oven and to accompany escarole she only added a bit of garlic and olive oil to this salad. Por otra parte decir que estos buñuelos son los más sencillos que hay porque no llevan mantequilla, ni huevos como he podido ver en otras muchas recetas que hay por la web.<br />

2 vasos de agua templada<br />

En un bol se pone el agua templada con la levadura y se le va añadiendo poco a poco la harina, ir mezclando hasta que sea una masa suave, ni muy liquida ni muy espesa. Dejar reposar media hora, es importante que no esté donde haya corrientes y en un rincón templado.</div>

Poner una sarten bien llena de aceite y calentar, cuando el aceite este bien caliente, con una cuchara y ayudados por el dedo ir echando trozos de la masa, bajar el fuego porque queremos que la masa se haga bien por dentro y no se queme por fuera. <br />
Ir sacando a un plato con papel de cocina para escurrir el exceso de aceite, rebozar los buñuelos en azucar y comer, podeis hacer chocolate para mojar los buñuelos en ella¡¡¡ A los peques de la casa les va a encantar¡¡ a mi los buñuelos me llenan de recuerdos de mi niñez, siempre jugabamos a adivinar que formas de animal podian tener los buñuelos, patos,elefantes, mencionabamos todo el zoologico y es que cuando se es pequeño se tiene una gran imaginación¡¡<br />

Las asaduras son las partes internas del pollo como pueden ser higados y riñones, hay gente que no le gustan (yo me incluyo en ellas) pero a mi media naranja le chiflan, asi que he decidido hacerlas hoy con jerez y un arroz blanco de acompañamiento. Es facil, sencilla de hacer y economica, solamente teneis que pedir a vuestro carnicero que os reserve estas asaduras, bien limpias y hechas son una delicia para muchos.</div>

Ingredientes para 4 personas<br />
800 gramos de asaduras (riñones e higado de pollo)<br />
1 cebolla<br />
1 diente de ajo<br />
1 cucharada de pan rallado<br />
1 manojo de perejil<br />
1 vaso de jerez<br />
1 vaso de agua<br />

Para el arroz para 4 personas<br />
2 vasos de arroz<br />
4 vasos de agua caliente (por cada vaso de arroz, poner 2 vasos de agua)<br />
3/4 dientes ajo con piel<br />
Aceite de oliva<br />

Lo primero de todo es limpiar bien tanto los riñones como los higadillos, sobretodo los riñones a los que teneis que quitar la parte grasa y pellejos, una vez limpios ambos, los troceais y los poneis en una fuente con sal durante un par de horas. Luego los lavais bien debajo del grifo de agua fria y los dejais en remojo durante veinte minutos, después los escurris y ya estan preparados para freirlos.<br />
<br />
Hacer el arroz, poner en una cazuela un poco de aceite de oliva, echar los dientes de ajo enteros con piel, dorar y echar el arroz, remover bien hasta que el arroz haya soltado su almidón, echar el agua caliente, añadir la sal y dejar hervir a fuego fuerte cuando este hirviendo bajar el fuego y esperar unos 15 minutos, ir probando el arroz para ver que esté en su punto, tiene que quedar suelto pero no duro. Espolvorear el perejil picado y luego poner el arroz en un molde con corona previamente untado con aceite,dejar que se enfrie un poquito antes de dar la vuelta. Reservar.<br />

Mientras se hace el arroz se va haciendo las asaduras con la salsa.<br />
Poner en una sarten la cebolla picada con el aceite de oliva, echarle un poco de sal, de esta manera la cebolla no se os quemara, ir removiendo la cebolla a fuego medio-lento para que no se queme, cuando veais que se está dorando, echar la carne y un diente de ajo picadito, remover bien hasta que la carne esté bien dorado, echar la cucharada de pan rallado, el jerez y el agua. Ir removiendo hasta que el alcohol se haya vaporizado y la salsa vaya cogiendo consistencia.<br />

Darle la vuelta al molde de arroz, poniendo en un plato bonito y presentar en la mesa poniendo la carne con la salsa en el centro de la corona<br />

Como no tengo gallina, he pensado en hacer la receta con pollo, es una receta que me la pasó mi suegra y que además de facil es economica, además podeis aprovechar las sobras si habeis comprado un pollo al "ast", sino es asi también podeis meter en el horno con un poco de aceite,sal y pimienta unas pechugas de pollo o gallina, dejarlas que se doren por ambos lados y enfriarlas. Una vez frias cortalas en daditos pequeños.</div>

En una sarten con un poco de aceite freir bien la carne picada con un diente de ajo picado, sal y pimienta negra, cuando está dorada apartar y reservar.<br />
En el mismo aceite poner la cebolla picadita a dorar, ajo picado y unos trozos de pimiento verde (opcional), echar el tomate triturado o el tomate fresco, a mi me gusta añadir una cucharita de azucar para matar la acidez del tomate. Dejar hervir durante 10 a 15 minutos a fuego medio y pasar por el pasapures, juntarlo con la carne y rectificar de sal y pimienta. Reservar<br />
En una cazuela honda poner a hervir agua, cuando esté hirviendo echar los macarrones, añadir un chorrito de aceite (esto es para que no se apelmace la pasta) y un poco de sal, cuando estén al dente, escurrir el agua y pasarlos por agua fria durante unos segundos.<br />

In a sauce pan put a bit of olive oil, fry the mincemeat with a clove of chopped garlic, salt and black pepper, once it is golden, reserve.<br />
In the same saucepan put chopped onions and garlic with some pieces of green pepper (optional), add the natural crushed tomatoes, i like also to add a small spoon of sugar so you take out the acidity of the tomatoes. Let simmer for 10 to 15 minutes at medium fire, then pass the sauce in the food-mill, add to the meat and reserve<br />
In a deep casserole put water to boil, once it is boiling add the macaroni with a bit of olive oil (this will make the macaroni do not stick one to the other) and a bit of salt, when they are "al dente" drain the water.<br />

In a oven tray add the macaroni together with the meat and the sauce, spread the grated cheese and introduce the tray in the oven until the macaroni are well gratiné<br />

Otra plato muy rico es <a href="http://recetasdeamatxu.blogspot.com/2011/10/potaje-garbanzoschickpeas-and.html" target="_blank">potaje de garbanzos con acelgas.</a></div>
También podeis coger la carne, trocearla grande, hacer una salsa de tomates y servirlos asi. La Salsa de tomate la podeis hacer a vuestro gusto, yo cogo tomates rojos muy maduros, frio antes unos dientes de ajo y pico cebolla, cuando esté pochada le añado unos pimientos de piquillo y el tomate, lo dejo a fuego lento para que se deshaga el tomate, luego lo paso todo por un pasapures, frio un poco la carne del cocido que me ha sobrado (pollo,tocino y morcillo)para que se dore y echo encima la salsa de tomate. En otros sitios ponen esta misma carne le añaden morcilla y pimientos asados en tiras y también está muy rico¡¡¡ Y se me olvidaba¡¡ también podeis hacer con la carne sobrante unas estupendas croquetas¡¡¡ Si sabeis más maneras de como aprovechar los restos del cocido decirmelo¡¡<br />

A veces no sabemos que poner de aperitivos cuando la gente viene a casa y normalmente recurrimos a comprar saladitos en la pasteleria más cercana, sin embargo los puedes hacer tu misma, no es dificil, los puedes rellenar con lo que más te apetezca, hoy los he puesto rellenos de sobrasada, paté de salmón y longanizas, pero se pueden hacer de mil rellenos más, datiles con bacon, tortilla de patatas, jamón y queso..<br />
La masa de hojaldre la podeis comprar hecha, asi es más rápido de hacer,sacarla del congelador con tiempo para que se tiemple y se pueda trabajar bien.<br />

¿A cuantas nos pasa que nos quedan restos de verduras en la nevera que no sabemos que hacer con ellas? pues a mi cuando me pasa ésto suelo hacer dos cosas, o un pisto o pongo las verduras troceadas en una bandeja de horno con un poco de aceite y sal, se precalienta el horno a unos 200ºC y luego se mete la llanda a unos 160ºC a 180ºC durante unos tres cuartos de hora, si poneis tomates los tendreis que añadir mas tarde para que no se deshagan. Cuando esten las verduras bien doradas y tiernes ya podeis sacarlas, ponerlas como una ensalada templada o para acompañar carnes o pescados. En este caso he puesto berenjenas,calabacines, cebolla, pimiento rojo y tomates.</div>

Para 4 personas:<br />
1 brocoli de 500 gramos<br />
3 rebanadas de pan<br />
2 dientes de ajo<br />
1 cucharadita de cominos<br />
1 cucharadita de pimentón dulce<br />
Cocer el brocoli para que este tierno con sal y un poco de aceite y reservar.<br />
<br />
Freis las rebanadas de pan hasta que estén doradas, las apartais y poneis un poquito del caldo del brocoli para que se ablanden.<br />
En ese mismo aceite freis los 2 dientes de ajos pelados y enteros<br />
En un mortero poneis la cucharadita de cominos, le añadis los ajos y el pan, majar todo bien<br />
Os habrá quedado más aceite en la sarten con cuidado que no se os queme le añadis el pimentón dulce y lo echais sobre el majado removiendo bien.<br />

Echar todo el majado en una sarten donde está el brocoli, remover bien, si está un poco espeso le podeis añadir un poco del caldo del brocoli, luego le poneis a pochar un huevo por persona y servir bien caliente.</div>

Boil the broccoli with salt and a bit of olive oil until the broccoli is tender, reserve it<br />
Fry the bread until golden, reserve with a bit of water<br />
In the same oil fry the garlic cloves whole and peeled.<br />
In a mortar put the cumins, add the fried garlic and bread, crush well<br />
In the oil left in the saucepan, add with care not to burn the sweet paprika and pour on the mortar<br />

El proceso es el siguiente:<br />
Se extiende la masa en la mesa de la cocina donde hemos espolvoreado antes un poco de harina y con un rodillo se va extendiendo la masa, tiene que tener al menos medio centimetro de espesor.<br />

Se coge un molde redondo grande y otro más pequeño, se hacen circulos con el molde grande, se ponen en una bandeja de horno y se pintan con un poco de huevo, con un tenedor se les pincha un poco para que esta parte no suba mucho, luego se hacen otros circulos grandes y con el molde pequeño se pone dentro de este circulo grande y al cortarlo se queda como una corona, separais esta corona y la poneis sobre los circulos que ya estan en la fuente se pegan bien y se pintan con huevo.</div>

Calentar 5 minutos antes el horno a unos 200 grados y meter la bandeja en el horno a los 15 minutos estarán hechos y vereis como la masa ha subido.</div>

Por otra parte, en una sarten poneis cebolla picada a dorar, cuando este pochada, echais las gambas peladas y la merluza y le dais vuelta para que doren, acto seguido le añadis una cucharada de harina removeis bien con cuidado que no se queme y le vais echando leche, cuando esta bechamel este espesita apartarla y dejar que se enfrie.</div>

Los volovanes ya estarán hechos, con un cuchillo quitais la masa central que se habrá subido, los rellenais con la bechamel y servir calientes, los podeis también reservar en el horno hasta la hora de comer y 5 minutos antes los calentais otra vez.</div>

When i do not have time to prepare the vol-au-vent i buy them prepacked, it is only question to stuff them and put them in the oven, but this time i have bought puff-pastry to do them myself.</div>
The process is as follows:<br />

Extend the pastry on the kitchen´s table where you have previously sprinkled a bit of flour with a roller extend it until it has a least 1 inch widht.</div>
Take a circle mould big and other one smaller, make circles in the pastry with the big one, place them in the oven tray and paint with a battered egg, then do again some big circles, but this time place inside the circles the small mould so you will have a crown, place these crowns on the top of the circles we have put in the oven tray fix properly and put a bit more of battered egg.<br />
Heat the oven previously for 5 minutes at 200ºC and introduce the tray, leave for 15 minutes, you will see how the pastry has gone up.<br />

Meanwhile in a saucepaun put half a chopped onion to golden, once it is soft put the prawns and the hake remove until golden, then pour one spoon of white flour remove taking care not to burn the flour, add slowly the milk until the white sauce is thick, reserve to cool a bit.<br />

When the vol-au-vent are done take out with a knife the central pastry, stuffed with the white sauce and serve very hot, if you prefer to reserve them for later then place them in the oven and 5 minutes before serving heat them again.</div>
