GALLO EN PEPITORIA /COCKEREL IN EGG AND ALMONDS SAUCE


No se si recordareis el pollo con piña que hice para un concurso de los Gallos del Mos, es una raza gallega de gallos que son ecologicos y se crian con maiz. Pues al final decidieron que todos los que habiamos participado nos darian un gallo para que pudieramos cocinarlos y asi probarlos. Ayer recibí el gallo y estoy encantada, lo he troceado, he guardado la carcasa para hacer un consomé al jerez, las pechugas para rellenarlas y he preparado el muslo, el contramuslo y las alitas a la pepitoria. Este plato es un clasico de la cocina española y a mi me ha gustado mucho.




Ingredientes para 4/6 personas:
1 gallo de 1 kg y medio
1 cebolla
2 dientes de ajo
50 gramos de almendras peladas
fritas
4 cucharas de aceite
Hebras de azafran
2 rebanadas de pan frito
2 huevos duros
1/4 litro de vino blanco
1 rama de perejil
Pimienta negra en grano
Sal

Dorar los trozos del gallo en aceite bien caliente y reservar
En ese mismo aceite dorar las rebanadas de pan y reservar
Con el mismo aceite rehogar la cebolla y el ajo durante unos minutos. Echar la harina, el laurel y el perejil.
Revolver y verter el vino blanco (también le he puesto un poco de jerez), cuando empieza a hervir, echar todo en una olla express (la salsa y el gallo). Dejar a fuego suave durante casi una hora.
Mientras en un mortero machacar las hebras de azafran, las almendras, el pan frito y las yemas de los huevos duros hasta que se forme una pasta.

Ya cocido el gallo retirarlo trozo a trozo de la olla y colocarlo en una cazuela de barro. Mezclar a la salsa, la pasta con las almendras y el pan y dejar hervir durante unos minutos. Luego pasar esta salsa con el pasapures por encima del gallo y servir.

I do not know if you remember when i did the chicken with pineapple for the contest of the Mos Cockerels, is a galician breed which are ecological and they are feed with corn. At the end they decided to give a cockerel to those who had participated so we could cook and taste them. Yesterday i received the cockerel and i am very happy¡¡¡, i have cut it, kept the bones to do a fine soup with Sherry, the breasts is to fill them up and i have prepared the cockerel legs and wings with an almond and eggs sauce. This dish is a clasic of the Spanish cousine and i have enjoyed a lot¡¡¡

Ingredients for 4/6 persons
1 kilo and a half of cockerel
1 onion
2 garlic cloves
50 grames of toasted almonds
4 spoons of olive oil
Saffron threads
2 loaf of bread
2 boiled eggs
1 glass and a half of white wine
Parsley
Salt

Fry the cockerel pieces in hot olive oil and reserve
In the same oil fry and golden the bread and reserve
With the same oil fry the chopped onion and garlic for some minutes. Put the flour, the bayleaf and the parsley, remove well and pour the white wine (i also have added a bit of Sherry), once starts to boil, place everything in the pressure cooker (the cockerel and the sauce). Leave at soft fire for around an hour
Meanwhile in a mortar put the saffron threads and smash them, add the almonds, the fried bread and the yolks of the eggs and smash all until it becomes a paste.

Once the cockerel is cooked place it in a casserole. Mix to the sauce the almonds paste and leave cooking for 4 or 5 minutes. Then place the sauce in a foodmill and pour the sauce onto the cockerel and serve

SOPA DE MENUDILLOS /BROTH


Pongo otra manera de aprovechar el cocido de garbanzos, esta vez en una sopa de menudillos,a mi me encanta y además es muy nutritiva.































Ingredientes:
Caldo del cocido
Unos pocos garbanzos
Pollo picado
Morcillo picado
Huevo duro
Fideos

Poner el caldo a calentar, mientras troceais la carne y poneis a hervir el huevo.

Cuando el caldo esté hirviendo añadir los fideos a vuestro gusto, poner la carne picada
Una vez esten los fideos tiernos, añadir el huevo duro picado antes de servir

This is another way to use the leftovers of the chickpeas stew, this is a broth. I love it and also it is very nutritive.

Ingredients:

Broth from the stew
Some chickpeas
Chopped chicken
Chopped veal
Boiled egg
Soup noodles

Heat the broth, meanwhile chop the meat and boil the egg

When the broth is boiling, then add the noodles, pour the chopped meat.
Once the noodles are done, add the chopped egg before serving

BACALAO CON PATATAS Y SALSA TARTARA/COD WITH POTATOES AND TARTAR SAUCE

Esta es mi segunda entrada para el Recetario Mañoso del mes de abril que va sobre la Cuaresma, la anfitriona es  Delantal o Mandil que está haciendo un trabajo estupendo, con una documentación muy exhaustiva sobre las costumbres culinarias en la Cuaresma.
El bacalao es uno de sus platos estrellas, hay mil maneras de prepararlo y a cada cual más rico, esta receta la podeis preparar con el bacalao fresco, o salado (tenerlo en remojo previamente unas 24-48 horas dependiendo del tamaño) o lo podeis comprar ya desalado en su punto de sal. Hace unas semanas me invitaron a comer en un Restaurante y pusieron el bacalao de esta manera y me encantó, creo que la receta se aproxima bastante a lo que comí que estaba muy rica y espero que si vosotros  probais a hacerla os saldrá igual de rica.



Ingredientes para 4 personas:

4 lomos de bacalao
4 patatas grandes
1 huevo
Harina
Aceite de oliva

Para la salsa tartara:
2 huevos
1 cucharada de mostaza (me gusta a la Antigua que se ven los granos)
8 cucharas de mayonesa
50 gramos de alcaparras
50 gramos de cebolla
1 rama de perejil

Cocer las patatas junto con los dos huevos, una vez cocidos, pelar las patatas y los huevos.

Hacer la salsa:
Cogeis las yemas cocidas y las pasais por el tamiz, añadirle la mostaza y batir , añadirle la mayonesa, mezclar bien. A continuación le añadis las alcaparras, el perejil, la cebolla y la clara de los huevos cocidos todo muy picadito. Guardar en la nevera

Con un molde redondo ponemos en cada plato las patatas cocidas que hemos cortado en rodajas, haciendo dos o tres capas de patatas, desmoldar y reservar.

Rebozar el lomo con la harina y luego el huevo y freirlo bien en aceite de oliva muy caliente, hecho esto poner el bacalao sobre papel de cocina para quitarle el exceso de aceite.

Quitamos el molde de la patata y vertimos por encima la salsa tartara.
Por último colocamos el lomo de bacalao encima
Adornamos con un poquito de perejil y servir



This is my second entry for Recetario Mañoso in April, the subject is the Lent, the hostess  is Delantal o Mandil, she is doing a fantastic work with a very exhaustive documentation about the gastronomic customs    in the Lent season.

Cod is one of the Star Dishes for this season, and there are thousands of ways to prepare it and each one more delish than the other¡¡¡ you can prepare this recipe with fresh cod or salted ( soaked in water during 24-48 hours depending of the size to desalt it) or you can buy it unsalted. A few weeks ago Iwas invited to a restaurant and they cooked the cod in this way and I loved it¡¡  I think this recipe aproximates to the one I ate and hope that if you cook it, it will result delicious for you too¡¡


Ingredients for 4 persons

4 cod filets
4 potatoes
1 egg
Flour
Olive Oil

For the Tarta sauce:
2 eggs
1 spoon of mustard (I prefer the mustard a l`Antique  where you can see the grains)
8 spoons of mayonaisse
50 grames of capers
50 grames of onion
1 parsley bunch

Boil the potatoes (with skin) with 2 eggs, once boiled, peel them

Make the sauce:
Take the boiled yolks and smashed them, add the mustard and  mix it until it becomes a thin cream, then add the mayonaisse and mix well. Add the capers .Then the parsley, the onion and the white of eggs, all finely chopped. Reserve in the fridge.

With a round mould put in each plate the potatoes which we have cut it in slices, make some layers of  the potatoes.

Coat the cod first in flour and after in battered egg, then fry in a saucepan with hot olive oil. Once done this, put the cod over a kitchen paper to take out the excess of oil.

Now we are going to present the dish
Pour tartar sauce over the potatoes and place on it the cod
Decorate with a bit of parsley and serve

CREPES CON AGUACATES Y GAMBAS/CREPES (PANCAKES WITH AVOCADO AND PRAWNS)

¿No os pasado alguna vez que vais a un restaurante y que pensais que el plato que estais comiendo lo podeis cambiar con algun ingrediente nuevo o una manera distinta de hacerlo? pues eso me pasó no hace mucho cuando estuve comiendo en un estupendo restaurante y nos dieron a probar unos crepes con aguacates, pero los aguacates estaban cortados en varitas finas junto con varitas de zanahorias y pensé que estarían mejor con una crema de aguacate y gambas. Dicho y hecho


Primero dejamos preparado la crema de aguacates y gambas

Ingredientes para 4 personas:
2 aguacates grandes maduros
300 gramos de gambas cocidas
(reservar de adorno algunas)
6 cucharadas de Mayonesa
2 cucharadas de Ketchup o Salsa Perrins

Mezclar los aguacates y las gambas y con un tenedor chafarlos hasta que quede una pasta, añadir la
mayonesa y el ketchup. Mezclar todo bien y reservar

Para las Crepes:

Ingredientes para 4 personas (2 crepes por persona)

10 cucharadas rasas de harina
3 cucharadas de azucar
1 cucharada de mantequilla fundida
2 huevos
1 vaso de leche

Batir en un cazo la harina, el azucar,la mantequilla y los huevos, añadir un vaso de leche y seguir batiendo. Luego pasar esta crema (tiene que estar ni muy ligera ni espesa) por el chino para que quede más fina.

En una sarten buena (la que tengais para las tortillas y no se pegue) poner una cucharadita de mantequilla y agregar 3 cucharas de la masa extendiendola bien por el fondo de la sarten, darle la vuelta, iran cogiendo un tono tostado .

Extender un poco de crema de los aguacates con gambas sobre los crepes, enrollarlos , decorar con gambas y cebollinos y servir. También podeis llevar los crepes a la mesa y que cada uno se ponga la crema y se enrolle los crepes, como prefirais.


Have you gone sometimes to a Restaurant and think that the dish you were eating could be changed for any other ingredient or you thought in another way to cook it? This is what happened to me the other day when I was in a great restaurant,  I tried pancakes filled with avocado and carrots sticks, then i thought that it would be a good idea to filled them with an avocado and prawn cream.


First we will prepare the avocado and prawns cream
Ingredients for 4 persons:
2 big mature avocados
300 grames of cooked prawn
(reserve some to decorate)
6 spoons of mayonaisse
2 spoons of ketchup or Perrins sauce

Mix the avocados with the prawns and with a fork smashed them until it becomes a cream, add the mayonaisse and the ketchup. Mix all well and reserve

For the crepes (pancakes)

Ingredients for 4 persons (2 crepes per person)
10 spoons of flour
3 spoons of sugar
1 spoon of melted butter
2 eggs
1 glass of milk

Mix in a bowl, the flour, sugar, butter and eggs, then add the milk and mix it.

In a good saucepan (the one you use for the omelettes and does not stick) put a spoon of butter and pour 3 spoons of the cream, extend all over the saucepan, turn it back, it will get a nice brown colour.

Extend a bit of the avocado cream on the crep, roll them up and serve. You also can take the crepes with the cream apart to the table, then each person will take the crepes to fill  and roll them, this is as you prefer, if you have a lot of persons at home the second option will be the best¡¡

FRESAS Y KIWIS CON NATA/KIWI AND STRAWBERRY WITH CREAM

La estación de las fresas ya ha empezado en España, asi que es buen momento para tomar de postre fresas con nata, a mi me gusta también ponerle trocitos de kiwi, probarla asi y ya vereis que delicia¡¡

Ingredientes para 1 copa:

1 kiwi
3 fresas grandes o fresones
Nata montada

Cortar las fresas y los kiwis en laminas, poner un poco de nata en la base de la copa, ir añadiendo una lamina de kiwi y otra de fresa, poner otro poco de nata y añadir otra fila de fruta, terminar con un poco de nata montada y adornar con menta.

Strawberry season has just started in Spain, and it is a good moment to eat as dessert strawberries with cream, i also like to add them kiwi. Try it¡¡ you will see it is delicious¡¡

Ingredients for 1 cup:
1 kiwi
3 big strawberries
Cream

Cut in slices the kiwi and the strawberries, put a bit of cream in the base of the cup, add alternating one slice of kiwi and one of strawberry, add a bit more cream and repeat the operation, finishing with a touch of cream and decorate with a mint leaf.

PASTEL DEL PASTOR/ SHEPPERD´S PIE

Este un plato típico de la cocina inglesa con un origen muy antiguo, es una de las comidas que más se hacen para los Domingos, en mi época de estudiante en Inglaterra era uno de mis platos favoritos. Además es económico y no muy dificil de hacer.

Ingredientes para 4 personas

600 gramos de carne picada
(puede ser de ternera o de cerdo)
4 patatas grandes
150 gramos de guisantes
2 zanahorias
Sal , pimienta negra
Salsa Worcetershire (Perrins)

Para la salsa:
1 cebolla
1 cucharada harina
1 vaso vino blanco o jerez

Se cuecen las patatas con piel, la zanahoria a trocitos pequeños y los guisantes pequeños, cuando la patata esté tierna se saca y reserva.
Colar los guisantes y zanahorias y apartar
En una sarten con un poco de aceite se dora bien la carne picada con la sal, pimienta negra y unas gotas de
la salsa worcestershire (opcional) y se reserva.

En una fuente de cristal honda, poneis la carne picada primero, luego los guisantes y las zanahorias.

Las patatas las chafais con un tenedor y una cucharadita de mantequilla, tiene que estar un pure espeso.

Colocar el pure en la fuente de cristal y con el tenedor hacer unos surcos. Meter en el horno a gratinar hasta que veais que se tuesta el pure.
La salsa es opcional:
Generalmente los ingleses usan una salsa que se llama Gravy, aprovechan el jugo de la carne que hayan hecho al horno, le incorporan en la misma llanda una jarrita con maizena diluida en agua y van batiendo en el fuego esa salsa hata que toma una tonalidad oscura. En nuestro caso como no hemos hecho carne al horno, vamos a aprovechar el aceite que ha sobrado de freir la carne picada y echamos la cebolla picadita, se tienen que dorar bien sin quemar, después se le echa una cuchara de harina se remueve bien para que se tueste y se le añade el vino blanco o de jerez, ligar bien y pasar por la batidora.

Cuando se sirva este pastel (poner un salvamantales porque está muy caliente) se pone luego por encima la salsa de acompañamiento, doy fe que estaba muy rica y con ganas me he quedado de repetir pero la patata me engorda mucho¡¡

Truco: lo podeis hacer de un dia para otro, luego es solo cuestión de calentar en el horno el pastel y calentar la salsa aparte.

This is a typical English recipe with a very old origin, is the most cooked meal for Sundays, in my student´s period in England it was one of my favourite dishes. Also it is very economic and not very difficult to do.


Ingredients for 4 persons:
600 grames of mincemeat
(beef or pork)
4 big potatoes
150 grames green peas
2 carrots
Salt, Black pepper
Worcestershire sauce

For the sauce:
1 onion
1 spoon of white flour
1 glass of white wine or sherry

Boil the potatoes with skin, the carrots in small pieces and the small green peas, when the potatoes are done, take apart and reserve.
Drain the carrots and the green peas and reserve

In a saucepan with a bit of olive oil golden the mince meat with the salt, black pepper and a few drops of Worcestershire sauce (optional) and reserve.

In a deep glass oven tray place first the mincemeat, then over this the carrots and green peas.

Smash the potatoes with a bit of salt and one spoon of butter, make a thick cream.

Place the smashed potatoes on the glass tray and with a fork make some scars. Place it in the oven to grate until you see the potatoes are quite grated.

The sauce is optional
Usually, English people use a sauce called Gravy, the take the juice of the roasted meat cooked in the oven and add flour mixed with a bit of water, then they mix on the fire this sauce which has a brown colour. In our case as we have not cooke nothing in the oven,  we will use the spare olive oil where the mincemeat has been done and fry the chopped onion, golden well but not burnt them, add a spoon of white flour and golden it a bit , then add a glass of white wine or sherry, then mix the sauce in the mixer.
At the time of serving this pie, put the sauce on the top.
Tip: you can do this for the following day, you only will have to heat this in the oven and also heat the sauce

HUEVOS DE VIGILIA / VIGIL EGGS

El mes de Abril va a ser el mes de "la Cuaresma" en Recetario Mañoso, nuestra anfitriona es Delantal o Mandil y creo que va a ser una apuesta muy dificil y los blogueros que participamos nos estamos calentando los sesos para poner una receta acorde al tema.

He buscado en un antiguo libro de recetas que tenia mi amatxu y me ha gustado ésta pues su titulo es Huevos de vigilia, no es nada complicada y es un poquito diferente a los típicos huevos rellenos.


Ingredientes para 4 personas:

8 huevos
100 gramos de gambas
50 gramos de almendras molidas
1 poco de perejil picado
1 clara de huevo
1/2 taza de leche
Sal, harina y media cebolla

Se cuecen los huevos, se enfrian, se parten por la mitad (yo en este caso lo he partido a lo ancho y no a lo largo). Coger las yemas y chafarlas para hacer un puré. Reservarlas

Cocer las gambas (tener en cuenta que el peso es sin cabeza ni cola), una vez hecho, aplastarlas con un tenedor y mezclarlas con las yemas, añadis perejil picado y la leche, lo poneis al fuego para mezclar bien la masa.

Coger esta pasta y rellenar los huevos, rebozarlos con un poco de clara batida y freirlos para que estén doraditos (si preferis lo podeis poner en el horno).

Una vez dorados, ponerlo en una cazuela, mientras en una sarten dorais media cebolla picadita con un poco de aceite de oliva, le echais la almendra molida, removeis bien, añadis un pellizco de harina y un poquito de agua, remover bien hasta que se quede una crema ligerita.

Verter la salsa sobre los huevos y dejar hervir durante unos 10 minutos en la cazuela con cuidado que no se os peguen los huevos.

April  is the "Lent month" in Recetario Mañoso, where our hostess is Delantal o Mandil, i think it is a difficult challenge and all bloggers who participate are racking their brains to put a recipe according this subject.

I have found my amatxu´s old recipe book and i liked the  one titled "Vigil Eggs", it is not very complicated and a bit different to the typical stuffed eggs.


Ingredients for 4 persons:

8 eggs
100 grames of prawns
50 grames of smashed almonds
A bit of chopped parsley
1 white egg
1/2 cup of milk
Salt, flour and half an onion

Boil the eggs, let them cool, cut in halves, then take the yolks and smashed them. Reserve
Boil the prawns (have in mind that the weight is with no head and tail), once done, smashed with a fork and mix with the yolks, add the chopped parsley and the milk. Put a bit in the fire and mix all well.

Fill the eggs with this mix, coated them with the battered egg white and fry them until golden (if you prefer you can do this in the oven)

Once golden, place them in a casserole, meanwhile, put a bit of olive oil in a saucepan and fry the half chopped onion, add the smashed almonds, remove and add a bit of white flour and a bit of water. Remove till there is a light sauce.

Pour the sauce over the eggs and let them boil during 10 minutes in the casserole having care of not stick the eggs.
