ARROZ AL HORNO/ RICE IN THE OVEN WITH LEFTOVERS

Con las sobras que nos han quedado del cocido se puede hacer un arroz al horno, aprovechamos el caldo del cocido, los garbanzos y los trozos de tocino y morcillo que hayan sobrado, si os gustan las morcillas se pueden añadir también en rodajas

Ingredientes para 4 personas
2 vasos de arroz
5 vasos de caldo del cocido
Garbanzos, tocino y morcillo que haya sobrado
4 dientes de ajo
1 poco de aceite de oliva

Calentar el caldo en un cazo aparte, mientras poner en una cacerola de barro un poco de aceite y dorar los dientes de ajo con piel, añadir los garbanzos y luego el arroz, con cuidado que no se queme, verter el caldo y dejarlo hervir a fuego fuerte, cuando esté en ebullición bajar el fuego a media-baja potencia y tapar la cacerola, dejar durante 10 o 15 minutos, echando un vistazo de vez en cuando para que el arroz no se pegue al fondo, y comprobando que el arroz esta blando pero no demasiado. Antes de que se evapore el caldo completamente, añadir los trocitos de carne, introducir la cacerola en el horno (calentar previamente el horno) y poneis a gratinar el arroz, cuando este gratinado, apagar el horno, dejar reposar unos minutos y servir. Si os gusta el huevo, podeis batir uno y echarlo sobre la cacerola y meterla al horno para que se gratine.

With the leftovers from the chickpeas stew, we can do a rice in the oven, we take the stew broth, the chickpeas and some pieces of schin and fatty pork leftover, if you like blackpudding you can add them in slices.

Ingredients for 4 persons
2 full glasess of rice
5 full glasses of broth from the stew
Chickpeas,schin and fatty pork from leftovers
4 garlic cloves
A bit of olive oil

Heat the broth separately, meanwhile put in a casserole a bit of olive oil, fry the garlic cloves entires with their skin, add the chickpeas, then add the rice and remove taking care not to burn the rice, pour the hot broth and let it boiled at high fire, then low down the fire to mid-low potency and cover the casserole, leave for 10 to 15 minutes, looking from time to time so the rice do not stick in the bottom of the casserole, taste to check that the rice is done. Before the broth evaporates completely, add the meat leftovers, introduce the casserole in the oven (previously heat the oven) so the rice and the meat golden and is crispy. Then serve

PAELLA TRES ARROCES CON PESCADO/THREE RICES PAELLA WITH FISH

Como me quedaba un poco de fritura congelada pensé, ¿Qué mejor que aprovecharla para una paella? tenía un poco de chipirón, pota y tintorera y un paquete de arroz con tres tipos distintos de arroz, arroz largo vaporizado o "parboiled" tipo basmati, arroz rojo integral y arroz salvaje negro que procede de una semilla de una planta acuatica de la zona norte de los Estados Unidos, este arroz es el que suelo tomar en vez del típico bomba porque por mi diabetes los tomo integrales. Decir que su cocción lleva más tiempo que un arroz normal para que esté más tierno, además teneis que poner 3 partes de agua en vez de 2 para que esté en su punto.

Ingredientes para 4 personas:
2 vasos de arroz
6 vasos de agua
4 chipirones
400 gramos de pescado (el que más os guste pero que este limpio de raspas)
1/2 cebolla
1 lata pequeña de pimientos rojos
Azafran o en su defecto colorante alimentario
Aceite Oliva
1 diente ajo

En una sarten o paellera poner a sofreir un diente de ajo cuando esté dorado quitar, sofreir la cebolla picada, le añadis el pimiento rojo troceado a vuestro gusto, dejais que se poche todo.
Añadir el pescado cortado en taquitos pequeños y dorar bien, una vez dorado echar el arroz y remover bien, previamente habreis puesto a hervir el agua y entonces se la añadis al arroz, dejar hervir un rato y bajar el fuego, cuando noteis que está hecho bajar el fuego otra vez al mínimo y tapar.
Dejar reposar 5 minutos

As i had a bit of frozen fish, i thought, what is the best thing to cook than a paella? i had squids and monkfish and a packet of 3 rices, long white rice or "parboiled, basmati type, whole red rice and black wild rice which comes from an acuatic seed grown in the north of United States, this is the rice i eat instead of the round one as due to my diabetes i only take wholegrain rices. I must say that the time of cooking is longer than a normal rice, also you have to add 3 parts of water for 1 of rice instead ot 2 of water for the normal white rice.


Ingredients for 4 persons:
2 glasses of rice
6 glasses of water
4 squids
400 grames of fish (the one you prefer but it must be clean of bones)
Half an onion
1 can of red peppers
Saffron or if you do not have this food colouring
Olive oil
1 garlic clove

In a sauce pan or "paellera" with a bit of olive oil golden a garlic clove, take out and add the chopped onion, pour also the red peppers in slices, remove and soft the ingredients
Add the fish you had previously cut in small pieces and golden, once golden add the rice and remove, apart you had boiled the water, add the water to the rice, leave boiling for a while and then low the fire, when you notice the rice is done, low down again the fire and cover the saucepan.
Leave for 5 minute to settle and serve.
