ENSALADA QUESO CABRA Y MERMELADA DE TOMATE/GOAT CHEESE AND TOMATOE MARMALADE SALAD

We have been celebrating my husband´s birthday and one of the starters I did was a simple goat cheese with tomatoe marmalade salad, it is very easy to do, although the cheese´s price is a bit high, it deserves as its flavour is really delicious, so if you have guess at home and you do not know what to do this is your salad. It is really easy to do except for the tomate marmalade (you have the option to buy in the shop this).
1 kilo of rippen tomatoes
1/2 kilo of sugar
Half a glass of orange juice
1 slice per person of cheese goat
Balsamic Modena vinegar
Blanch the tomatoes and peel them, then in saucepan add the sugar, the orange juice and the peeled tomatoes, remove softly until the tomatoes dissolve and thicken, once done introduce them in a glass-jar, you can keep this during a week or more. But if you want them to be kept more time, then you will have to put the jar(s) in a casserole with boiling water (put water until you reach the lid of the jar) and keep them boiling for 20 to 30 minutes, after let them cool with the jar upside down
In a nice tray put a layer of the assorted salads, add the salt, the olive oil and the balsamic vinegar. Place on the top of this the slices of cheese goat and the tomatoe´s marmalade.
