DORADA A LA SAL/SALTED GOLDEN BREAM

Hoy vamos a hacer una dorada a la sal, muy tipica de la zona de Murcia, la clave de esta receta es su ingrediente, comprar una buena dorada fresca, con la piel muy brillante, las agallas bien rojas y los ojos no deben estar hundidos ni apagados pues es sintoma de que no está fresco.
Los ingredientes también son sencillos: Dorada y sal gorda

Cogeis una fuente de horno y cubris el fondo con la sal tal y como pone en la foto, poneis el pescado lavado pero sin limpiar el interior pues sino cogeria toda la sal, y lo cubris completamente de sal, humedecer vuestras manos e ir presionando sobre la sal. Poneis el horno a unos 180/200 grados y el tiempo depende del tamaño de la dorada, es preferible por ejemplo 2 pequeños a uno grande. El tiempo varia entre los 15 a 20 minutos. Un truco: dejar sin sal los ojos del pescado, cuando éstos se vuelvan blancos e hinchados querrá decir que el pescado está en su punto, entonces apagais el horno y lo dejais reposar durante 5 minutos. Sacais la fuente del horno y le quitais con cuidado la sal, ésta estará dura y la podreis quitar con facilidad.
A la hora de servir podeis acompañar el pescado con una salsa a las finas hierbas, salsa tartara o mayonesa. Eso a vuestro gusto. Si cuando le quiteis la espina central con facilidad eso querra decir que el pescado está en su punto y fresco.

Today we are going to do a golden bream with salt, very typical from Murcia region (southeast of Spain), the key for this recipe is the quality of the fish, you must buy a fresh golden bream, with a brilliant skin, the gills must be very red and the eyes must not be deep-set or dull as it is a symptom that it is not fresh.

Take a oven dish and cover the bottom with cooking salt as it shows in the photo, then put the washed fish but not clean it inside and cover completely with the salt, wet your hand-palms and press on the salt. Put the oven at 180/200 degrees and the time depends on the size but it can vary from 15 to 20 minutes. Here the secret is not to put salt in the eye area, when you see the eyes getting white and blown up it means that the fish is ready, then switch off the oven and leave it for 5 minutes. In this way you will always get the optimum point of the fish as if you cook it toomuch the flesh of the fish will be very dry.
Take out the salt from the fish and serve.
You can do a nice fine-herbs sauce  or a simple mahoinaise to go with the fish.
