HUEVOS AL COLCHON/EGGS OVER MATTREST
1 cucharada grande de harina
1 vaso de leche
Sal, pimienta negra y un poco de nuez moscada

Ingredients for 4 persons
5 small eggs
Salt, black pepper and a bit of nutmeg
You have to do a dense bechamel sauce, first golden the onion at low fire when it is transparent and soft, add the flour, remove well and stir the milk, do remove it all the time, when you see that the bechamel detaches from the pan then it is done.
Fry one egg per person. Take the bechamel and put a bit in a plate, then put the fried egg over the bechamel and cover the egg with more bechamel. Keep this in the fridge to cool down.
Once it is cold, with a lot of care not the break the yolk, cover this with the flour, then cover with battered egg and finally with breadcrumbs. Fried this in olive oil and serve¡¡¡
