ASADURAS DE POLLO AL JEREZ/CHICKEN INNARDS IN SHERRY SAUCE

Las asaduras son las partes internas del pollo como pueden ser higados y riñones, hay gente que no le gustan (yo me incluyo en ellas) pero a mi media naranja le chiflan, asi que he decidido hacerlas hoy con jerez y un arroz blanco de acompañamiento. Es facil, sencilla de hacer y economica, solamente teneis que pedir a vuestro carnicero que os reserve estas asaduras, bien limpias y hechas son una delicia para muchos.

Ingredientes para 4 personas
800 gramos de asaduras (riñones e higado de pollo)
1 cebolla
1 diente de ajo
1 cucharada de pan rallado
1 manojo de perejil
1 vaso de jerez
1 vaso de agua

Para el arroz para 4 personas
2 vasos de arroz
4 vasos de agua caliente (por cada vaso de arroz, poner 2 vasos de agua)
3/4 dientes ajo con piel
Aceite de oliva

Lo primero de todo es limpiar bien tanto los riñones como los higadillos, sobretodo los riñones a los que teneis que quitar la parte grasa y pellejos, una vez limpios ambos, los troceais y los poneis en una fuente con sal durante un par de horas. Luego los lavais bien debajo del grifo de agua fria y los dejais en remojo durante veinte minutos, después los escurris y ya estan preparados para freirlos.

Hacer el arroz, poner en una cazuela un poco de aceite de oliva, echar los dientes de ajo enteros con piel, dorar y echar el arroz, remover bien hasta que el arroz haya soltado su almidón, echar el agua caliente, añadir la sal y dejar hervir a fuego fuerte cuando este hirviendo bajar el fuego y esperar unos 15 minutos, ir probando el arroz para ver que esté en su punto, tiene que quedar suelto pero no duro. Espolvorear el perejil picado y luego poner el arroz en un molde con corona previamente untado con aceite,dejar que se enfrie un poquito antes de dar la vuelta. Reservar.

Mientras se hace el arroz se va haciendo las asaduras con la salsa.
Poner en una sarten la cebolla picada con el aceite de oliva, echarle un poco de sal, de esta manera la cebolla no se os quemara, ir removiendo la cebolla a fuego medio-lento para que no se queme, cuando veais que se está dorando, echar la carne y un diente de ajo picadito, remover bien hasta que la carne esté bien dorado, echar la cucharada de pan rallado, el jerez y el agua. Ir removiendo hasta que el alcohol se haya vaporizado y la salsa vaya cogiendo consistencia.

Darle la vuelta al molde de arroz, poniendo en un plato bonito y presentar en la mesa poniendo la carne con la salsa en el centro de la corona

Innards are the internal part of the chicken, kidneys and liver.There are many people who do not like this (including myself) but my husband loves them, so today i have cooked them in a sherry sauce together with a white rice, the rice with the sherry sauce is delicious¡¡. It is easy, simple and cheap, you only will have to ask your butcher to reserve for you the innard, well done it is a delicious dish for many people

Ingredients for 4 persons
800 grames of innards (chicken´s kidneys and livers)
1 onion
1 garlic clove
1 spoon of breadcrumbs
A bit of parsley
1 glass of sherry
1 glass of water

Rice for 4 persons:
2 glasses of rice
4 glasses of hot water (for each glass of rice, two of water)
3 to 4 garlic cloves with skin
Olive oil

First clean throughly the kidneys and livers, take out the fat, once cleaned, cut them in pieces and place them in a tray with salt, leave them there for at least 2 hours. After this clean them under the water tab and leave them with water for 20 minutes, drain them and reserve.

Cook the rice, put in a casserole a bit of olive oil, add the garlic cloves with their skin too, put the rice and remove , then pour the hot water, add the salt and leave it boiling at strong fire, once it is boiling low down the fire and wait for 15 minutes, tasting the rice to check it is ok, the grains must be separated but not hard. Sprinkle the parsley and put the rice in a mould previously spreaded with oil. Reserve.
At the same time cook the chicken innards
In a saucepan place the chopped onion with olive oil, add a bit of salt, in this way the onion will not burnt, remove the onions at soft fire, when the onion is golden, add the innards with a chopped garlic clove, remove well until the meat is brown. Put the spoon of breadcrumbs, add the sherry and the water. Remove until the alcohol evaporates and the sauce gest consistency.
Turn down the rice mould in a nice plate and present it with the meat inside the rice crown.
