I remember to have spent  years ago a Christmas Eve in the Spanish Pyrinees, the owner of the small country hotel where we were lodged made a wonderful dinner for that night, it was roasted lamb in the wooden oven and to accompany escarole she only added a bit of garlic and olive oil to this salad. It was a simple but effective dinner, the lamb was so tender and the escarole made that the flavours were superb.

In the web of Saboores they are doing a cooking contest with vegetables http://www.saboores.com/ and as they are from that part of Spain i couldn´t resist the temptation to make a very simple recipe, it takes you only 10 minutes or less to do it.

Ingredients for 4 persons

1 escarole
4 kiwis
250 grames strawberries
Salt
Olive oil
Modena vinegar

Wash and drain the escarola, peel and cut in slices the kiwis and strawberries.
Place all  ingredients in a bol and dress as you prefer

It is a very simple salad, with a nice colours and the flavour contrast between the bitterness of the escarole and the sweetness of the fruit

There is no three without two, it is a Spanish saying, i have done 3 times this recipe, as it is at the beginning a bit difficult to find the right touch to the pastry, the first time it became very liquid, the second one to thick, regardless of my mum indications, now this third time is the right one¡¡ as you can notice i am a bit pigheaded¡¡

Ingredientes
2 glasses of warm water
350 grames of white flour
1 bit of salt
4 big spoons of  yeast

In a bowl put the warm water with the yeast, add gradually the white flour, mix until it becomes a soft batter, not too liquid nor too thick. Leave it settle for half an hour, it is very important that you do not leave it within drafts and place it in a warm place

Put a lot of olive oil in a saucepan and heat it, once it is well hot, with the help of a spoon we put bit of this batter into the saucepan, you will send that the pastry will expand, low down the fire as we want the pastry  is well done inside but not burnt in the outside.
Place the fritters in a plate with a papercloth to take out the excess of oil, then cover the fritters with sugar and if you want, made a hot chocolate. Your children will love this¡¡

Innards are the internal part of the chicken, kidneys and liver. There are many people who do not like this (including myself) but my husband loves them, so today i have cooked them in a sherry sauce together with a white rice, the rice with the sherry sauce is delicious¡¡. It is easy, simple and cheap, you only will have to ask your butcher to reserve for you the innard, well done it is a delicious dish for many people

Ingredients for 4 persons
800 grames of innards (chicken´s kidneys and livers)
1 onion
1 garlic clove
1 spoon of breadcrumbs
A bit of parsley
1 glass of sherry
1 glass of water

Rice for 4 persons:
2 glasses of rice
4 glasses of hot water (for each glass of rice, two of water)
3 to 4 garlic cloves with skin

First clean throughly the kidneys and livers, take out the fat, once cleaned, cut them in pieces and place them in a tray with salt, leave them there for at least 2 hours. After this clean them under the water tab and leave them with water for 20 minutes, drain them and reserve.

Cook the rice, put in a casserole a bit of olive oil, add the garlic cloves with their skin too, put the rice and remove , then pour the hot water, add the salt and leave it boiling at strong fire, once it is boiling low down the fire and wait for 15 minutes, tasting the rice to check it is ok, the grains must be separated but not hard. POLLO CON PIÑA /CHICKEN WITH PINEAPPLE

I am participating with this recipe in the 1st  contest of  the Mos Cockerel "Souto de Herville", if you would like to participate too, please see this link http://criatradicionalgallinasdemos.blogspot.com/

My mother in law gave me this recipe which apart from be very easy is cheap too, you also can use the leftovers from the roasted chicken, if this is not the case, then introduce some chicken breasts with a bit of oil, salt and white pepper, once they are a bit golden, take them out and cool them. Then cut them in small dices.
You can buy a natural pineapple, but if you do not find this you can take a can of pineapple in syrup, cut them in small dices too.
Then do a cocktail sauce with mahonaise, ketchup, tabasco sauce (only some drops) if you like strong, then a few drops of whisky or cognac as you prefer

Mix all in a bowl put it in the fridge and serve cold. Has it not been difficult, has´nt it?

MACARRONES CON CARNE/MACARONI WITH MEAT

1 cebolla
1 pimiento verde
2 diente de ajo
Aceite oliva
Sal, oregano,perejil, pimienta negra

Following our anti-crisis dishes, today i have done macaroni with meat and tomatoe sauce. The meat is not mince as my husband does not like in this way, so i have cut it in very small pieces which is quite a lot of work¡¡
Ingredients for 4 persons:
500 grames of macaroni
500 grames of mincemeat (pork loin)
2 cans of natural tomatoes (or 1´5 kilo of fresh red mature tomatoes)
1 onion
1 green pepper
2 garlic cloves
Olive oil
Salt, oregano, parsley, black pepper

In a sauce pan put a bit of olive oil, fry the mincemeat with a clove of chopped garlic, salt and black pepper, once it is golden, reserve.
In the same saucepan put chopped onions and garlic with some pieces of green pepper (optional), add the natural crushed tomatoes, i like also to add a small spoon of sugar so you take out the acidity of the tomatoes. Let simmer for 10 to 15 minutes at medium fire, then pass the sauce in the food-mill, add to the meat and reserve
In a deep casserole put water to boil, once it is boiling add the macaroni with a bit of olive oil (this will make the macaroni do not stick one to the other) and a bit of salt, when they are "al dente" drain the water.

In a oven tray add the macaroni together with the meat and the sauce, spread the grated cheese and introduce the tray in the oven until the macaroni are well  gratiné

With a chickpeas stew you can do a lot of things with its leftovers, we can do a soup with noodles, soup with meatballs, soup with small chopped pieces of the meat and a boiled egg, also you can do what we call "ropa vieja" "old cloth", fry in a saucepan the chickpeas and the meat until they become really crunchy. You can do a rice in the oven or if you prefer chickepeas and sweetchard stew.
But this time we are going to do a tomatoe sauce for the meat leftovers. Take big red and mature tomatoes and do the sauce at your own taste, i fry in a sauce pan with a bit of olive Oil some garlic cloves, chopped onions and when the onions are soft and golden ,add some cooked red peppers and the chopped tomatoes, leave it at soft fire until the tomatoes are done and put the food-mill to make the sauce, then add the meat leftovers than you have previosuly cut in pieces. In other places they put this meat along with blackpudding and roasted red peppers. I nearly forget it¡¡ you can also do croquettes ¡¡ If you know of more ways to eat the stew leftovers please do tell me¡¡

SALADITOS/ APPETIZERS

Sometimes we do not know what to put as appetizers when guests are coming home and we usually go to a bakery to buy them, but you can do them yourselves, it is not difficult and you can fill them with what you want, today i have stuffed them with soft spicy sausage spread, salmón paté and sausages, but you can do thousands of stuffings, with spanish omelette, dates with bacon, ham and cheese..
You can buy a puff pastry, so it is quicker to do, take out from the freezer in advance so you can work well with it.

First put a bit of white flour in the working table and with a roller extend the pastry

Make rectangles in the pastry and put the stuff you prefer

Paint the pastry with a brush soaked in beaten egg so the pastry gets golden and close the joints

Y a comerlos¡¡
Preheat the oven at 200ºC and introduce the tray lowing down to 180ºC and keep it during 10 minutes until the rolls are golden and crunchy. Time to eat¡¡
