This is my second entry for Recetario Mañoso in April, the subject is the Lent, the hostess is Delantal o Mandil, she is doing a fantastic work with a very exhaustive documentation about the gastronomic customs in the Lent season.
Cod is one of the Star Dishes for this season, and there are thousands of ways to prepare it and each one more delish than the other¡¡¡ you can prepare this recipe with fresh cod or salted ( soaked in water during 24-48 hours depending of the size to desalt it) or you can buy it unsalted. A few weeks ago Iwas invited to a restaurant and they cooked the cod in this way and I loved it¡¡ I think this recipe aproximates to the one I ate and hope that if you cook it, it will result delicious for you too¡¡
Ingredients for 4 persons
4 cod filets
4 potatoes
1 egg
Flour
Olive Oil
For the Tarta sauce:
2 eggs
1 spoon of mustard (I prefer the mustard a l`Antique where you can see the grains)
8 spoons of mayonaisse
50 grames of capers
50 grames of onion
1 parsley bunch
Boil the potatoes (with skin) with 2 eggs, once boiled, peel them
Make the sauce:
Take the boiled yolks and smashed them, add the mustard and mix it until it becomes a thin cream, then add the mayonaisse and mix well. Add the capers .Then the parsley, the onion and the white of eggs, all finely chopped. Reserve in the fridge.
With a round mould put in each plate the potatoes which we have cut it in slices, make some layers of the potatoes.
Coat the cod first in flour and after in battered egg, then fry in a saucepan with hot olive oil. Once done this, put the cod over a kitchen paper to take out the excess of oil.
Now we are going to present the dish
Pour tartar sauce over the potatoes and place on it the cod
Decorate with a bit of parsley and serve

ENSALADA CANTONAL / CANTONAL SALAD

200 grames of smoked salmon
1 onion
50 grames of
Black olives (of the variety you like most)
Salt (not much as the fish and the capers have)
Olive oil and vinagre
Cut in small pieces the fish
Cut in small cubes the tomatoes and the onions
Mix in a bowl and add the capers and the black olives

March is the month of the Aragonese Olives in El Recetario Mañoso, as i do not live in Aragon but i love olives, i have done a typical recipe from Cartagena which have black olives (i hope you forgive me they are not from Aragon but i have not found them here), usually this salad has "cuquillo" olives, a type of small black olives but it is not now its season.
The salad is called "Cantonal" because Cartagena was on its days an Independent Canton in Spain and they are very proud of its 3000 years of antiquity which is a lot¡¡. The products of this salad are also very typical from this Area, the smoked and the salted fish are made since long time ago here, in Roman times (who they were very intelligent taking the best of each place) made the "garum" a kind of fish paste.
200 grames of smoked cod
4 red tomatoes1 onion
50 grames of
Black olives (of the variety you like most)
Salt (not much as the fish and the capers have)
Olive oil and vinagre
Cut in small pieces the fish

SALMON Y BACALAO MARINADO/MARINATED COD AND SALMON
Buy in the fishmonger, half a salmon and half a cod (both fresh), ask the fishermonger to clean and take out the bones and open the fish in half.
At home place them in deep trays, put a layer of a sugar-salt mix (a kilo of each),put with the skin above the fish and cover with more salt and sugar and a bit of dill. Cover with a plastic film and place it in the fridge between 24 to 48 hours depending on the thickness of the fish.
After this take out all the salt and wash it a bit, take out the bones that ca remain and cut the fish in thin slices, places them in a tupperware and cover with sunflower oil as the olive oil solidifies in the fridge. Then you can take out this each time you like to do a meal or canapé with them, it can last in the fridge at least 2 months, taking of course care to cover it with oil. What can you do with this? A salmon and cod "carpaccio", with fresh mashed tomatoes as a layer in the tray and then place the fish. You also can do triangles with loaf bread, spread butter on them and place the salmon, ornate with some caviar. Today i have done 3 different canapé, one with asparragus, other with spread cheese and some dill and the remain one with what we call in Spain " eggs thread", i have bought it already done but it is difficult to find this in the stores and more difficult to do it¡¡ my mother in law used to do it and one day i will try to do it myself.
I wish you all from my heart a HAPPY NEW YEAR 2012¡¡¡

ENSALADA BACALAO Y PIMIENTOS ASADOS/COD AND ROASTED RED PEPPERS SALAD
Ingredientes para 4 personas:
2 pimientos rojos grandes

2 big red peppers
400 grames of cod1 garlic clove
Salt and Olive oil
Put in a oven-dish the red peppers and cover them with a bit of olive oil, introduce it in the oven at 150-180ºC, turn them round from time to time, when you see the skin wrinkled, press with a fork to see if the peppers are soft, then take out from the oven and cover the dish with a clean kitchen-cloth (in this way they are peeled better).
This recipe is from my Andalusian granny, it is a very complete and nutritive salad which we love to do at home in summer time, i hope you like too¡¡. If you buy desalted cod the better as it will only require to cut it in small pieces, if you buy salted cod then you will need to put in water 24 hours before and change the water around 3 times, after this cut it in pieces.
2 oranges
2 medium size cooked potatoes
1 fresh onion
Olive oil
SaltBalsamic vinegar
Cut in slices the cooked potatoes, the cod and the oranges, chop the onion.
Mix all in a deep tray, add the olive oil, salt and balsamic vinegar
As you can see it is a very simple salad with no complication
I ornate the dish with some mint leaves
