CALAMARES EN SU TINTA/SQUIDS IN THEIR BLACK SAUCE

First of all i want to dedicate this recipe to a friend and great cook Manuel Jover Lozano, whose blog http://mispinitosenlacocina.blogspot.com/ was one of the first i read when started mine, Manuel was a very friendly and joyful man and we will miss him but i am sure he is now in the Heaven doing what he most liked which is cooking.
Squids in their black sauce is a very easy recipe although i bit labourious but of course it is deserve to do it as all your guess will appreciate it, and please have a lot of bread around the table as they will ask you to dip in the sauce¡¡
Ingredients for 4 persons:
1 kilo of small or medium squids
2 small bags of ink (you can find them also frozen)
1 big onion
2 slices of fried bread
2 spoons of fried tomato can
Oil
1 garlic clove
Salt

Clean throughly the squids, take them out the skin, clean the tentacles and cut the fins. Fill the squids with the tentacles and the fins.
In a saucepan pour a bit of olive oil, put the garlic with skin and golden, once done take out and put the squids, you will see the squids get closed, then add a glass of white wine, let it boil at slow fire.
Meanwhile  in other saucepan put olive oil and fry the two bread slices, once golden, take them apart and put the chopped onion in the same oil until golden and soft. Add the two spoons of tomate, the ink previously dissolved in hot water and lastly the fried bread, when all the mix is soft then you can pass this in the food-mill or in a mixer. Pour the sauce over the squids and remove a bit, leave it at soft fire so the flavour mix properly and serve hot.

This recipe has been in my mother´s book but i have no idea who or how she has done this, the only thing i know for sure is that the flavour is very tasty and different and it is really easy to do. Other idea would be to have this together with white rice (probably other day i will do it).

INGREDIENTS FOR 4 PERSONS:
1 Kg of fresh squids
1 onion
1 garlic clove
1 spoon of curry
Salt
1 glass of dry white wine
1 glass of water
3 spoons of olive oil

Clean very well the squids and sliced them. In a pan put the olive oil and soften the chopped garlic and onion.
Add the squids and a bit of salt, move them and add the spoon of curry.
Stir the white wine and the glass of water. Boil them softly till the squids are tender.
