Me encanta el lenguado, mi amatxu lo solía poner así y sale muy rico y jugoso, aunque ahora la verdad es que su precio ha subido mucho, pero si comprais gallo o perca estará igual de rico.
Ingredientes para 4 personas
4 filetes medianos de lenguado
2 cucharas de mantequilla
Zumo de limón
Perejil
Sal
Harina
Huevo
Aceite de oliva
Pedir en la pescaderia que le quiten la piel y las espinas, ya en casa rebozarlos primero por harina y luego por huevo y en una sarten caliente con bastante aceite de oliva, freirlos con cuidado que no se quemen mucho. Sacar y reservar caliente
Mientras en otra sarten poner la mantequilla cuando esté derretida apagar el fuego y echar el perejil picado y el zumo de limón. Remover e inmediatamente verter sobre el lenguado. Servir enseguida
