PATATAS A LA RIOJANA/POTATOES RIOJA STYLE

Creo que mi madre es una de las personas que mas usa las patatas en todas sus diferentes versiones y variedades, estaba claro que con una familia numerosa , la patata era el ingrediente más socorrido en casa, esta receta además de estar muy rica llena mucho, se la dedico a mi sobrina Carolina que es una fan total de las patatas a la riojana y su abuela cada vez que va a visitarla se las tiene que preparar.

Ingredientes para 4 personas:
3/4 kilo de patatas
Aceite,
Pimentón
2 o 3 dientes de ajo
100 gramos de chorizo riojano un poco picante

Se pelan y cascan las patatas en trocitos medianos (no se corta la patata sino que antes de terminar de cortala se abre, hace un ruido caracteristico, como un crack, eso hace que suelten el almidon y están luego más jugosas).
Se laminan los ajos bien pequeños y finos y se trocea el chorizo.
En una cazuela se pone un trozo de ajo con el aceite cuando esté dorado se retira (es para darle sabor al aceite) y se pone en el aceite las patatas, los ajos picaditos, el chorizo y una cucharadita de pimenton y se rehoga todo.
Añadirle 1 litro de agua caliente, se pone sal y pimienta y dejar hervir a fuego suave durante 20 minutos, cuando pincheis con el tenedor la patata y esté blandita es que ya está hecha.

I believe that my mother is one of the persons who use potatoes in all their different versions and varieties, it was clear that with a numerous family, the potato was the most helpful ingredient at the time of cooking at home. This recipe is typical from La Rioja area (place of the Rioja wines). I dedicate it to my niece Carolina, that each time she comes to visit her granny, my mother has to cook it for her.

Ingredients for 4 persons
3/4 kilo potatoes
Olive oil
Papikra powder
2 or 3 garlic cloves
100 grams of rioja chorizo a bit spicy

Peel and cut the potatoes in medium pieces (trick: do not cut completely the potatoe, before finishing the cut break it with your fingers, it will do a typical noise like crack, this made the potatoe to be soft and absorbe the flavours)
Cut in thin slices the garlic and also cut the chorizo
In a casserole put an entire garlic clove to be fried with olive oil, when it is golden, take it apart (it is only to give flavour to the oil), then you put the potatoes, the chopped garlic, the chorizo and a small spoon of paprika powder. Remove all well.
Add a liter of hot water, put the salt and a bit of white pepper and let it boil in soft fire during 20 minutes, if you spear the potatoes with a fork and they are soft, then they are done and you can serve them.

PATATAS A LO POBRE/POTATOES AT "POOR STYLE"

El origen de este plato es andaluz si bien se come por toda España, no se de donde viene el nombre de "a lo pobre" pero imagino que será porque la gente ni siquiera tendría huevos para hacer una tortilla con él. De todas maneras esta tan rico o más que una tortilla de patatas, asi que si quereis hacerlo para acompañar una buena carne o pescado este es el acompañanimiento ideal, también lo podeis hacer si queriais hacer una tortilla de patata y os encontrais conque en la nevera no teneis huevos. El truco para que este plato esté bueno es en hacerlo a fuego lento y tapando la sarten para que las patatas y los pimientos se pongan blandos.

Ingredientes para 4 personas
4 patatas medianas
1 cebolla grande
1 or 2 pimientos italianos, sino 1 pimiento clovis grande
Sal y aceite oliva
Ajo es opcional

Poneis en una sarten mucho aceite, mientras se calienta, cortar en rodajas de medio centimetro de ancho las patatas, los pimientos los cortais en tiras finas y les quitais la semilla, la cebolla cortarla en tiras finas a la juliana. Cuando el aceite esté ya bien caliente, echar todos los ingredientes en la sarten, ir removiendo bien, bajar el fuego y tenerlo asi durante unos 20 minutos, tapais la sarten e ir removiendo de ver en cuando.
Notareis con el tacto de la cuchara que la patata y los pimientos se van poniendo blandos y que las patatas han adquirido un bonito color dorado. Entonces sacar los ingredientes, ponerlos en una fuente con papel absorbente para eliminar el exceso de grasa y servir.

The origin of this recipe is Andalusian although it is done now all over Spain, i do not know where the name "poor potatoes" comes from, i imagine because in the old times there were people who did not even have eggs to do a Spanish omelette. Anyway, it is so good as the Spanish omelette, even if you want to cook it to go with meat or fish, or in the event you do not have eggs in the fridge for an omelette, it is a good option. The trick of this dish is to cook it at slow fire and covering the pan so the potatoes and the green pepper becomes soft.
Ingredients for 4 persons
4 medium size potatoes
1 big onion
1 or 2 italian green peppers, if not 1 big clovis green pepper
Salt and olive oil
Garlic is optional

Fill with oil the saucepan, meanwhile is heating the oil, cut te potatoes in slices of 0,5 cm width, cut the green peppers in thin slices and take out the seeds, also cut the onions in thing slices too. When the oil is well hot, pour all the ingredients in the pan and remove properly, then low the fire during 20 minutes or so, cover the pan and remove from time to time the potatoes. You will note when they are done because the potatoes has become soft and they are goldened. Then take out the ingredients, put them in a dish with kitchen-paper to eliminate the oil excess and serve.

ENSALADA PATATAS VERANO/SUMMER SALAD POTATOES

Esta ensalada de patatas se ha hecho en mi casa toda la vida, es fresca y facil de hacer, es la tipica ensalada que nuestras madres dejaban hechas por la mañana temprano para comerla mas tarde, admite muchas variantes pero creo y no me equivoco que esta es la básica, como vereis mas tarde la patata era un ingrediente básico en la cocina de mi amatxu, las ha hecho en todas sus variantes posibles, solas al horno, en salsa verde, con carne, con pescado, con verduras, en tortilla...e iré poniendo de vez en cuando una de las recetas porque ademas de faciles son platos baratos y nutritivos. Puede hacerse para acompañar al pollo al limon que hicimos el otro dia o para un pescado a la plancha.

Ingredientes:
1 patata grande por persona
1 huevo por persona
1 lata pimientos de piquillo o pimiento fresco rojo y verde si se quiere
1 o 2 latas de atun (dependiendo de la cantidad de comensales)
1 tomate por persona
1 o 2 latas de aceitunes verde, también queda muy bien con aceitunas negras
Sal, aceite y vinagre a gusto

Se cuece en olla express las patatas lavadas con su piel y los huevos, una vez la olla empieze a pitar se deja durante 10 minutos, si las dejais más tiempo la patata se puede deshacer y queremos que esté blanda pero entera. Se deja enfriar un poco, se pelan tanto las patatas como los huevos, se parten en rodajas de 1 cm de grosor y se pone todo en una fuente bonita y lo meteis en la nevera.
A la hora de comer, cortais en trocitos largos los pimientos, en rodajas el tomate, poneis el atun desmenuzado y adornais con el huevo y las aceitunas. Aliñar a vuestro gusto la ensalada y servirla bien fria.

I have always remember my mum doing this recipe, is fresh and easy-to-do, it is the typical salad our mother left done in the morning to eat it after for lunch, it admits a lot of variants and different ingredients but this is the basic one, as you can see later, potatoes are the most basic ingredient in Amatxu´s recipes, she has done them in all different ways, in the oven, in green sauce, with meat, with fish, with vegetables, potatoes omelette, i will be posting in the future some of these recipes as they are apart of easy, economic and nutritive dishes. You can do this recipe to go with the chicken in lemon sauce or for grilled fish.


Ingredients:

1 big potatoe per person
1 egg per person
1 can of red pepper or if you prefer you can put fresh red and green peppers
1 or 2 cans of tuna (depending on the quantity of people you invite)
1 fresh tomatoe per person
1 or 2 cans of green olives, you can also put if you prefer black olives
Salt, olive oil and vinegar to your taste

Boil water and add the clean unpeeled potatoes and eggs in the pressure cooker, once the cooker starts to whistle leave it cooking for 10 minutes, if you leave too much time, the potatoe can break and we want it becomes soft but not broken. Cool them a bit, then peel the potatoes and the eggs, cut them in slices of  1 cm width and place it in a nice dish and keep it in the fridge
At the time of eating, then cut in long slices the peppers, in slices the tomatoes, add the tuna and decorate with the eggs and olives. You can dress at your taste.

PATATAS EN SALSA VERDE/ POTATOES IN GREEN SAUCE


Ingredientes para 4 personas

3/4 kilo de patatas
perejil,
2 dientes de ajo
1 huevo duro
aceite y sal

Se cortan las patatas en lonchas, el perejil y el ajo se cortan muy menudos
Se pone el aceite a calentar con un trocito de ajo, cuando el ajo esté dorado se retira y se echa al aceite las patatas, el perejil y el ajo.
Se cubre con agua caliente, se sala y hierve durante unos 15 minutos.
Luego se le echa el huevo duro picado y se cuece durante otros 5 minutos y se sirve
Como vereis es una receta rapida y muy sabrosa, hay un truco para que el ajo no pique, cuando lo peleis lo partis por la mitad y le quitais la parte central que es donde tiene su raiz.

Ingredients for 4 persons
3/4 kilo potatoes
Parsley
2 garlic cloves
1 boiled egg
Olive oil and salt

Cut the potatoes in slices, chop thin the parsley and garlic
Put olive oil in a casserole and heat it with a garlic clove, when the garlic is golden brown, take it away and put the potatoes, parsley and garlic. Cover them with hot water and boil for 15 minutes. Then add the boiled egg previously chopped and cook for 5 minutes more, then serve.
This recipe is very easy and quick. If you do not like that the garlic be very spicy then cut in half and take away the central part.
